Baked chicken for dinner?
Who doesn't like a tasty baked chicken for dinner? A vegetarian I guess :) But the problem is, preparing a good chicken dish may not be that easy. Of course, you have the option of going out or ordering a chicken dinner for pick-up or delivery but that can be quite expensive.
Well, this baked chicken with bacon recipe is very easy to follow and not hard to remember. Here's your chance to prepare a delicious home-cooked meal that you and your family can be proud of.
I'll also throw in a couple of side items for fun... k? So let's go preheat those ovens!

How to make baked chicken with bacon
an easy chicken recipe
I wasn't kidding when I said it was an easy chicken recipe. In fact, it's almost too easy :)
Let's start by getting our ingredients together.
You will need:
- 3-4 boneless chicken breasts
- uncooked bacon (use as much or as little as you like)
- 1 pack of chipped beef (I'm talking about the 50 cent packs in the lunch meat section)
- 1 can of Cream of Mushroom soup
- 1 Cup of sour cream
That's it... nothing fancy, right? But wait till you taste it.
Casserole Dish - You will need one to bake the chicken
This dish would work perfectly and it's beautiful.

Start by preheating your oven to 300 degrees. Next, lay the beef out on the bottom of your casserole dish. An 8X8 or a smaller round one is fine...not too big. Wash the chicken thoroughly and then wrap it with the bacon...one or two pieces each, whatever your taste is. It should look like the picture.
All you have to do now is mix the soup and sour cream together and spoon it over the chicken. Bake it for approximately 3 hours...just keep an eye on it. The hardest part is waiting for it to get done, especially when you start to smell it. Yum.

Red potato salad
a yummy side dish to go with your baked chicken
You just made an entrée that has three meats in it and can be filling by itself. We need to add a light side dish to complement it without stuffing you to the gills. What am I saying?! I am from the south and we don't count calories or watch carbs. I say, pile up the plate.
Red potatoes are my favorite side dish. How about we compromise with the 'health conscience' and do a potato salad? Here is a recipe I found at Cooks.com
GOURMET RED POTATO SALAD
3 lbs. sm. red potatoes (unpeeled)
3/4 c. mayonnaise
2 tsp. tarragon vinegar
3/4 tsp. dry mustard
1/2 tsp. salt
3/4 c. heavy whipping cream (whipped)
1/4 c. fresh parsley (chopped)
1/2 c. chopped green onions or shallots
Put potatoes in large pot of salted cold water. Bring to boil 15 to 20 minutes until tender but firm. Drain and rinse under cold water. Refrigerate, covered, until chilled. Cut potatoes in 3/4 inch cubes.
In medium bowl blend mayonnaise, vinegar, mustard and salt. Fold in whipped cream. Add chopped green onions and parsley. Add potatoes and fold gently to coat. Cover and refrigerate at least 2 hours.
If you start this right after you put the chicken in the oven, it will be ready when the chicken is. It works out perfectly.

More simple side dishes - to complement your baked chiken
I know that not everyone is a chef. Lord knows I'm not. If you are looking for something more simple to cook with your chicken, here are some quick options:
- Heat up a canned vegetable. Green beans, peas, or corn will work fine. You don't have to get fancy.
- Make a fruit salad. Cut up some fresh apples, strawberries, bananas, and grapes and toss them in a bowl. Add a little powdered sugar to make it sweet if you want.
- Break out the Pillsbury. Who doesn't love Pillsbury Croissants? They are my favorite.
- Whip up some mashed potatoes. Season to your liking.
