You Can't Beat Beets!

But you can food process them!

I'm falling in love with beets all over again. When I was a kid, I was the pickiest eater in the land, especially when it came to vegetables, but I loved beets. Whenever my mom served them, I was one of the only ones at the table that would touch the vibrantly-colored dish even though I would sit at the table for hours to avoid eating many other veggies.

Now that I'm an adult and a vegetarian, I'm always looking for new and interesting ways to prepare the vegetables I love (there are many more of them now). And Beet Hummus, with a few little additions of my own, is one of my new favorites! It's a delicious, satisfying and healthy way to enjoy lunch or even just a snack. I hope you like it too!

This book came so highly rated, I couldn't resist it. It includes a lengthy list of healthy ingredients for dips plus a lot of detailed information about each one. Then it's chock full of 60 recipes that are sure to please. I have my favorites and I'm sure you will too.


I don't own this book, but I hope to soon. With 25 hummus recipes and tons of good information about the nutritional benefits of chickpeas, how to prepare the, and more, it's a must have for any vegetarian looking for the perfect, affordable protein source for their diet.

I found the original recipe online and had to make it my own. One one clove of garlic? Puh-lease! The garlic blends perfectly with the sweet earthiness of the beets and the nutty flavor of the tahini and a little salt brings out all the flavors. This dip is excellent served with baked pita chips.

Prep time: 1 hour
Cook time: 15 min
Ready in: 1 hour 15 min
Yields: 4


  • 1 -3/4 cup fresh beets (roasted and peeled)
  • 2 -3 cloves garlic (or to taste)
  • 1/4 cup tahini
  • 2 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 1/2 teaspoon Kosher salt


  1. Toss all ingredients into a food processor and blend until smooth. Adjust salt and garlic to taste.

Make It Easy on Yourself Later - Prepare ahead and freeze

I love preparing foods in the season when they're most plentiful, and these beets are no exception. I spent a weekend roasting and peeling fresh beets. Then I used my food processor to slice them for quicker thawing later. I vacuum sealed them for freshness in the exact size packages I need to make my new favorite, healthy snack and tossed the packages in the freezer. Easy peasy beet hummus whenever I want it through the cold colorless winter months!

      I love eating hummus and garlic is my favorite. I've never thought of making hummus out of beets. Thanks for sharing this new recipe on Merry Monday.
