My Caramel Apple Pie Recipe
My all time favorite dessert to make for the holiays (or anytime really) is my world famous (to my familly at least) caramel apple pie! I've kept the recipe a secret for many, many years. I mean hey, I wanted to be the girl who always brought the best dessert, can you blame a girl???
Any how, I thought it was about time I shared it. So I figured if I was giving the recipe out to my family I may just as well give it to the world. Truth be told, I don't remember where the recipe came from but I've modified it over the years though and put my own touches on it.
It was probably 15-16 years ago when my aunt (who is known for her desserts) passed along to me an apple pie recipe that I made for a holiday. Everyone liked it and the following year I was asked to make it again. The problem was I misplaced the recipe and when I called to get it again from my aunt she couldn't find it either. So I started scouring for a good recipe. I stumbled across my now famous caramel apple pie recipe either in a cookbook or on the good old world wide web. Once I made it I wasn't sad I lost the other one! It is so delicious that years later when I did find the other recipe I put it back into my recipe file and still make the "replacement" recipe.

Crunchy Caramel Apple Pie
1 Single refrigerated pie crust (store bought)
You are welcome to use a recipe from scratch but when I first started making this recipe I worked full time and didn't have time for all that and now I have 2 small kids so it's nice to eliminate a step.
1 Cup packed brown sugar
1/2 Cup flour
1/2 Cup Oatmeal (quick serve is just fine)
1/2 Cup Butter
1/2 Cup Sugar
3 TBSP Flour
1 Tsp. Cinnamon
1/2 Tsp. Salt
6 Cups Apples peeled and cubed apples (You can slice them but I prefer the more chunky texture so I cube them)
1/4 Cup Caramel Ice Cream Topping
Stir together brown sugar, 1/2 cup flour and oatmeal. Cut in butter until mixture reseambles coarse crumbles.
In large mixing bowl stir together, sugar 3 TBSP flour, cinnamon and salt. Add apples and gently toss until coated.
Put apple mixture in pastry lined pie plate. Sprinkle crumb topping over apples.
To prevent over baking cover edge with foil or a pie crust shield works best.
Bake @ 375 degrees for 25 minutes, remove foil or shield and bake for 25-30 minutes longer.
Drizzle with caramel and cool completely on wire rack.
