The Best-Ever Banana Bread Recipe is Economical and Delicious

The best-ever banana bread recipe. We've been making (and eating) it for more than 16 years! Tried, tested and true, this recipe has never failed and we have never, ever found another recipe for a banana loaf that is as moist or as delicious as this one is and it is easy, too! A simple and homey comfort food that is perfect for breakfast, coffee time, recess, teatime or anytime. It is absolutely YUMMY!

This recipe originally came from the Winnipeg Free Press, a daily newspaper in Manitoba in Canada. Over the years I have found many great recipes from my local newspapers wherever I have lived. This one is amongst my best recipes; my son begged me not to share the recipe with you!

The Best-Ever Banana Bread Recipe

I'm not joking when I say this recipe is delicious and easy. We have been making it for years. That is, my children and I. I am not sure at what age my teenage boys started making this but they have absolutely no problem putting it together for us now!

Cook Time

Prep Time: 10 minutes

Total Time: 1.3 hours

Serves: Many!

Ingredients

  • 1 cup mashed very ripe bananas
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/2 cup sour cream (light or regular)
  • 2 eggs well beaten
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl, mix together well the bananas, sugar, oil, sour cream and eggs.
  2. In another bowl, mix together the flour, baking powder, baking soda and salt.
  3. Then add the dry mix to the banana mix, stirring until just combined. It couldn't be easier!
  4. Bake in a greased 9 by 5 inch loaf pan at 325 degrees for 1 to 1 1/4 hours or until a tester comes out clean.
  5. Cool for five minutes before removing from pan.

Secret #1 - Overripe Bananas

To make the Best-Ever Banana Bread truly the best one you've ever had, you're going to have to use overripe bananas. You're making a mistake if you use any other kind -- your bread simply will not compare!

Secret #2 - Freeze Them Peeled

Freeze your bananas as they become over ripe and you will always be ready to throw together a banana loaf! Some people throw the banana in the freezer, skin and all. I prefer to peel mine before I put them in the freezer because it is much easier to deal with the frozen banana this way!

Secret #3 - Eat The Next Day

Even when you have filled your banana bread with ripe bananas, the loaf is better if you wait a day or two to eat it. Be patient and let it ripen...believe me, you will be rewarded!

      I just harvested a couple hundred bananas from my banana plants. High winds knocked most of them off the plants too soon, but they are ripening quickly, so I am researching banana bread recipes. This one sounds delicious, but I'll have to go get some sour cream. Can't wait to try your recipe.

      Wow, never would have thought to use sour cream in banana bread, but it sounds Delicious! Will definitely be trying this out (I'll add walnuts to mine, as I love Banana NUT bread with butter). :)

      @paulahite: Hi Paula & thanks for your visit. I googled sour cream substitutions and came up with these ideas from Allrecipes.com. You can substitute 1 cup plain yogurt OR 1 tablespoon lemon juice or vinegar plus enough cream to make 1 cup OR 3/4 cup buttermilk mixed with 1/3 cup butter.

      Brenda, with apologies to your son, I thank you from the bottom of my heart and with every taste bud in my mouth for this wonderful recipe. I didn't want to comment until I had tried the recipe myself. I love banana bread, but in over 40 years, I've never made one where the bananas didn't sink to the bottom of the loaf. This is perfect. Could it be the sour cream? I've never used it in banana bread before. Whatever the reason, it turned out fabulously! You are welcome to come over for tea tomorrow, but I can't promise that both loaves won't already be eaten up! Grins and gratitutude, Joie and family

      Those are beautiful looking loaves, and I do miss banana bread. I made it often while raising children. I've tried making gluten-free banana bread, but it never finished baking, and finally I just cut it in wide slides, and fried it!

I love the secrets you share along the way and agree that letting it ripen or mellow sure does wonderful things with the flavor...its so hare to resist though, have never been able to wait for that first piece that long.       Oh yes, I love banana bread. We could never wait a day or two to eat it. My recipe is almost identical to yours, except I use whole wheat flour. Because it's whole wheat and has no preservatives, the banana bread goes stale quickly. That's never a problem for us, though. We can't keep our hands off it!

      I would guess the sour cream would lend a lot of moistness to the banana bread. Funny, my sister has told me the same tips and especially that you want overripe bananas and as overripe as you can get them, she also freezes the bananas. I always get one in the mail, so it has had the chance to age. So that's why its so good! Shell has one other secret, she uses coconut rum, yum. I do have a loaf that she just sent me, so you'll know where I'll be an maybe some orange spice tea with that.

      I love banana bread - but usually add pecans. You are so right about the ripe bananas - it makes all the difference in the world. I'm going to try freezing my overripe bananas again. The last time I did it, I was put off by how they looked after they had been in the freezer for a few weeks! :)

      Yes, I also have my favorite Banana Bread Recipe, but I'm seeing a lot of good ideas here. And I love the Nordic Ware Banana Bread Pan. I'm a Bread Machine fan, but if I had one of these I'd bake all my banana bread loaves in it. I have recently started writing my bread machine recipes on Squidoo and will lensroll this lens to them.       I have a recipe that is similar to this one that I use all the time. Execept that recipe doesn't call for sour cream. I'm vegan, so I've veganized the other one I have so I will do the same to this one adding vegan sour cream. I'll be sure to let you know how it turns out!

      I remember as a kid my mom served us banana bread for the first time and I thought "Want a minute - bananas can be made into BREAD?! How awesome it that?!" I still love the stuff to this day.
