The Best-Ever Banana Bread Recipe is Economical and Delicious

The best-ever banana bread recipe. We've been making (and eating) it for more than 16 years! Tried, tested and true, this recipe has never failed and we have never, ever found another recipe for a banana loaf that is as moist or as delicious as this one is and it is easy, too! A simple and homey comfort food that is perfect for breakfast, coffee time, recess, teatime or anytime. It is absolutely YUMMY!

This recipe originally came from the Winnipeg Free Press, a daily newspaper in Manitoba in Canada. Over the years I have found many great recipes from my local newspapers wherever I have lived. This one is amongst my best recipes; my son begged me not to share the recipe with you!

The Best-Ever Banana Bread Recipe

I'm not joking when I say this recipe is delicious and easy. We have been making it for years. That is, my children and I. I am not sure at what age my teenage boys started making this but they have absolutely no problem putting it together for us now!

Cook Time

Prep Time: 10 minutes

Total Time: 1.3 hours

Serves: Many!

Ingredients

  • 1 cup mashed very ripe bananas
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/2 cup sour cream (light or regular)
  • 2 eggs well beaten
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl, mix together well the bananas, sugar, oil, sour cream and eggs.
  2. In another bowl, mix together the flour, baking powder, baking soda and salt.
  3. Then add the dry mix to the banana mix, stirring until just combined. It couldn't be easier!
  4. Bake in a greased 9 by 5 inch loaf pan at 325 degrees for 1 to 1 1/4 hours or until a tester comes out clean.
  5. Cool for five minutes before removing from pan.

Secret #1 - Overripe Bananas

To make the Best-Ever Banana Bread truly the best one you've ever had, you're going to have to use overripe bananas. You're making a mistake if you use any other kind -- your bread simply will not compare!

Secret #2 - Freeze Them Peeled

Freeze your bananas as they become over ripe and you will always be ready to throw together a banana loaf! Some people throw the banana in the freezer, skin and all. I prefer to peel mine before I put them in the freezer because it is much easier to deal with the frozen banana this way!

Secret #3 - Eat The Next Day

Even when you have filled your banana bread with ripe bananas, the loaf is better if you wait a day or two to eat it. Be patient and let it ripen...believe me, you will be rewarded!

      You know what makes this recipe! NO NUTS! I love banana bread with no nuts. My mom always makes me banana bread when her bananas get ripe, bless her heart. It's my comfort food. This really looks amazing. The first thing I did when I got to the ingredients part of the lens was look for nuts and when I didn't see any I got really excited about making this for myself.       I have a favorite banana bread recipe. It has oats and nuts in it. We make it when we travel and aren't sure what kind of breakfast will be available where we will be staying. It's also a great late night snack. I'll have to try yours, though, too. We've always got bananas around, and sometimes they do get too ripe.

      Oh Hello sorry my mouth and hands are full. guess what im eating? Yes you guessed right, VERY DELICIOUS BANANA BREAD.i made 2 loaves from one recipe and gave my daughter one to take to work and she said that at first her workmates looked at the loaf kinda weird and when her boss came into the office and had a piece he said" you guys don't know what u missing and then everyone dug in.Now i have to go and bake some for my hubby in Canada, we live in Puerto Vallarta Mexico half the year and bananas grow right in our garden so u prone to have overripe bananas. Thankyou for posting this recipe, i feel great that i can bake a banana loaf now and its perfect, i would love to add nuts tho, i guess i add it to wet ingredients right? and how much will i add please?

      @kikitigger7: Kikitigger7, Thank you very much for your comments, I appreciate the feedback and knowing that you love the recipe as much as we do.I have never added nuts because my children never did care for them in baked products. I guess I should try putting some in the next loaf now that they are older. (They're teenage boys; they'll eat almost anything.)I would try adding a 1/2 a cup of nuts first and then you might even be able to guess visually if you think another 1/2 cup is reasonable or not. Be sure to come back and let us know how your 'nutty' experiment works out!

      How could I have missed this lens, Brenda? My recipe doesn't include sour cream and that sounds wonderful, so next batch will be from your recipe. When I baked a loaf of mine yesterday I was short a banana, so I added a peach instead! Also added blueberries, mmmm! A sample slice tasted great yesterday, but I agree with you that it's much better if you save it to the next day. I'm about ready for breakfast and I don't expect to be disappointed. Love that fabulous banana bread loaf pan you included. Cute!

      I have a recipe that is similar to this one that I use all the time. Execept that recipe doesn't call for sour cream. I'm vegan, so I've veganized the other one I have so I will do the same to this one adding vegan sour cream. I'll be sure to let you know how it turns out!

      Yes, I also have my favorite Banana Bread Recipe, but I'm seeing a lot of good ideas here. And I love the Nordic Ware Banana Bread Pan. I'm a Bread Machine fan, but if I had one of these I'd bake all my banana bread loaves in it. I have recently started writing my bread machine recipes on Squidoo and will lensroll this lens to them.       I love banana bread - but usually add pecans. You are so right about the ripe bananas - it makes all the difference in the world. I'm going to try freezing my overripe bananas again. The last time I did it, I was put off by how they looked after they had been in the freezer for a few weeks! :)

      I would guess the sour cream would lend a lot of moistness to the banana bread. Funny, my sister has told me the same tips and especially that you want overripe bananas and as overripe as you can get them, she also freezes the bananas. I always get one in the mail, so it has had the chance to age. So that's why its so good! Shell has one other secret, she uses coconut rum, yum. I do have a loaf that she just sent me, so you'll know where I'll be an maybe some orange spice tea with that.

      Oh yes, I love banana bread. We could never wait a day or two to eat it. My recipe is almost identical to yours, except I use whole wheat flour. Because it's whole wheat and has no preservatives, the banana bread goes stale quickly. That's never a problem for us, though. We can't keep our hands off it!

      Stopping by to sprinkle a little angel dust over your best ever banana bread recipe. I love the secrets you share along the way and agree that letting it ripen or mellow sure does wonderful things with the flavor...its so hare to resist though, have never been able to wait for that first piece that long. I especially love banana bread with butter for breakfast with a cup of coffee.

      I read that if you are short on ripe bananas for this recipe that you could just microwave one or two and they will get soft and sweet. Anyone ever try that?

      Those are beautiful looking loaves, and I do miss banana bread. I made it often while raising children. I've tried making gluten-free banana bread, but it never finished baking, and finally I just cut it in wide slides, and fried it!

      Brenda, with apologies to your son, I thank you from the bottom of my heart and with every taste bud in my mouth for this wonderful recipe. I didn't want to comment until I had tried the recipe myself. I love banana bread, but in over 40 years, I've never made one where the bananas didn't sink to the bottom of the loaf. This is perfect. Could it be the sour cream? I've never used it in banana bread before. Whatever the reason, it turned out fabulously! You are welcome to come over for tea tomorrow, but I can't promise that both loaves won't already be eaten up! Grins and gratitutude, Joie and family

      @paulahite: Hi Paula & thanks for your visit. I googled sour cream substitutions and came up with these ideas from Allrecipes.com. You can substitute 1 cup plain yogurt OR 1 tablespoon lemon juice or vinegar plus enough cream to make 1 cup OR 3/4 cup buttermilk mixed with 1/3 cup butter.

      Wow, never would have thought to use sour cream in banana bread, but it sounds Delicious! Will definitely be trying this out (I'll add walnuts to mine, as I love Banana NUT bread with butter). :)

      I just harvested a couple hundred bananas from my banana plants. High winds knocked most of them off the plants too soon, but they are ripening quickly, so I am researching banana bread recipes. This one sounds delicious, but I'll have to go get some sour cream. Can't wait to try your recipe.
