Grilled or toasted cheese sandwiches are hugely popular and a great favourite of many people. Do you sometimes wish, however, that you could find a few extra ways to spice them up, even just a little bit? Do you want to take a few steps beyond the traditional or conventional? The best ways to enhance grilled cheese toasties will vary depending upon personal taste but this page is devoted to providing some potential ideas - like the cheeseburger toastie! Grilled cheese toasties are not normally associated with breakfast. If you enjoy a fried breakfast, however, and are looking for ways to spice it up a little bit and make it a bit more imaginative, this is an easy way of introducing an extra little bit of variety.

  • Prep time: 10 min
  • Cook time: 25 min
  • Ready in: 35 min

Ingredients

  • 2 beef sausages
  • Vegetable oil for frying
  • 8 oz can chopped tomatoes in tomato juice
  • Salt and black pepper
  • 2 slices of bread
  • 1 slice of black pudding
  • 2 rashers/slices of bacon
  • 2 oz grated cheddar cheese
  • Tbsp baked beans in tomato sauce
  • 1 egg
  • HP Sauce (optional)

Instructions

  1. Pour the tomatoes in to a small saucepan and season with salt and pepper. Bring to a simmer for about twenty minutes, stirring occasionally, until a lush, thick sauce is formed.
  2. Add some oil to a large frying pan and put the sausages only in at this stage. Cook on a very gentle heat, turning occasionally, for twenty minutes, adding the black pudding after fifteen.
  3. Remove the sausages from the pan, add the bacon and turn the black pudding. Cook for five more minutes, turning the bacon half way through.
  4. Toast the bread slices on one side only. Chop the sausages and add to the untoasted side of one of the slices of bread. Spoon over the tomato sauce and top with the cheese. Melt the cheese under the grill, toasting the second side of the other slice of bread at the same time.
  5. Remove the black pudding and bacon to a heated plate and cover with foil. Start the egg gently frying in the vacated pan and put the beans on to heat in a saucepan.
  6. Place the empty slice of toast as a lid on the toastie and plate with the bacon. Top the bacon with the beans and black pudding and the toastie with the egg. Serve immediately, with or without the HP Sauce.

Boiled eggs and toast are another popular breakfast dish. Although this toastie recipe could be prepared at any time of day, it is another idea for varying breakfast menus.

Ingredients

  • 1 large egg
  • Small bit of butter
  • Salt and white pepper
  • 1 tsp fresh salad cress plus extra to garnish if desired
  • 1 thick slice of granary bread
  • 2 oz grated cheddar cheese

Instructions

  1. Put the egg in a pot of cold water and bring the water to a boil. Reduce the heat and simmer for seven minutes.
  2. Take the pot to the sink and run cold water in to it until the egg is cool enough to handle. Crack the shell of the egg on a hard surface and carefully peel. Place it in a small bowl with the butter and season with salt and white pepper. Mash the egg before stirring through the salad cress.
  3. Toast the bread on one side only. Spread the egg evenly on the untoasted side and top with the cheese. Melt the cheese under a hot grill and garnish with the remaining cress for service.

Baked beans are a big favourite of millions. A simple baked beans and cheese toastie is often referred to as a, "Cheese beano," but it is amazing how the addition of a little bit of sandwich pickle and a scattering of chopped chives can take it to new levels of scrumptiousness.

Ingredients

  • 1 tbsp baked beans in tomato sauce
  • 1 tsp fine cut sandwich pickle
  • 1 slice of bread
  • 2 oz cheddar cheese
  • Chopped chives to garnish

Instructions

  1. Add the beans and the pickle to a small pot or saucepan and gently heat.
  2. Toast the bread on one side only. Spread the warmed bean and pickle mixture on the untoasted side of the bread and top with the cheese. Grill until the cheese is melted and bubbling.
  3. Scatter with chopped fresh chives and serve immediately.

This is an incredibly quick and easy grilled cheese toastie, perfect for a light lunch or brunch.

Ingredients

  • 1 thick slice of farmhouse bread
  • 2 slices of white onion
  • 1 medium tomato
  • 2 oz cheddar cheese
  • Freshly ground black pepper
  • Tomato ketchup (optional)

Instructions

  1. Toast the slice of farmhouse bread on one side only. Slice the tomato and lay on the untoasted side, followed by the onion, split in to rings. Slice the cheese and cut to the required sizes to cover the onion and tomato and toast under a very hot grill until the cheese is melted and bubbling. Season with black pepper and add some tomato ketchup if desired before service.

Bacon and Pineapple Granary Cheese Toastie

  • Prep time: 5 min
  • Cook time: 10 min
  • Ready in: 15 min
  • Yields: One

Ingredients

  • 3 rashers of back bacon (or bacon type as available)
  • 1 tbsp vegetable oil for frying
  • 1 pineapple ring canned in own juice
  • 1 thick slice of granary bread
  • 2 oz grated cheddar cheese
  • Black pepper
  • 3 or 4 shredded basil leaves to garnish

Instructions

  1. Put the vegetable oil in to a non-stick frying pan and heat to medium. Add the bacon and fry for a couple of minutes each side until done.
  2. Remove the bacon to a heated plate and add the pineapple ring to the same pan to cook for one minute each side.
  3. While the pineapple ring is frying, toast the bread on one side only.
  4. Lay the bacon on the untoasted side of the bread, followed by the pineapple and the cheese. Grill until the cheese is melted and bubbling.
  5. Put the toastie on to the serving plate. Season with black pepper and garnish with the basil leaves.

This is a real meaty cheese toastie, in more ways than one. Beef on toast, topped with cheese, tomato relish and dill pickles followed by another slice of toast, all accompanied by a serving of homemade fries.

  • Prep time: 10 min
  • Cook time: 20 min
  • Ready in: 30 min
  • Yields: Two

Ingredients

  • 4 oz ground or minced beef
  • Sea salt and black pepper
  • 4 standard slices of bread
  • 4 oz grated/shredded cheddar cheese
  • 1 tablespoon tomato relish
  • 4 large dill pickle slices
  • 2 portions of homemade French fries (optional)

Instructions

  1. Put the beef in to a small pot and season with salt and pepper. Quickly brown over a medium heat, stirring with a wooden spoon. Pour in just enough boiling water to cover the beef and simmer gently for fifteen minutes.
  2. Toast all four slices of bread on one side only. Divide the beef between the untoasted sides of two of the slices of bread and spread evenly. Top the beef with the grated cheese and melt the cheese under the hot grill. At the same time, toast the two empty slices of bread on their second side.
  3. Divide and spread the relish on top of the cheese and lay two pickles on top of each slice. Top with the empty toast slices, press down gently and half diagonally before plating with (if appropriate) the fries.

      @KateHonebrink: Hi, Kate and thanks for visiting and commenting. Re black pudding - I apologise, I could have sworn I included an explanatory hyperlink there but I now see I didn't. I've rectified that in the relevant instruction capsule but essentially black pudding is also known as blood pudding or blood sausage. It is popular in the UK, France and parts of Germany, as well as certain other geographical pockets around the world. I have heard people say it is available in some parts of the United States but I'm not sure where. I know it can be bought on Amazon. The concept may sound revolting but it is absolutely delicious, I promise you! Hope you get the chance to enjoy black pudding soon.
