Italian Cooking Pasta Recipes-The Best Pasta Maker

Updated on October 7, 2016

Italian Cooking

Pasta Recipes with the best pasta maker to buy for your kitchen is easy. I love to cook Italian Recipes in my kitchen. My family loves spaghetti, fettuccine, and angel hair pasta when I make it fresh for them. The recipe I have was given to me by my mother who is a fabulous Italian cook. Her recipes date back to my great grandmother's time. The recipe I have is an authentic melt in your mouth one.

I always start with a hard wheat flour, like a combination of semolina and farina. This give me a noodle with lots of body and cooks to an el dente texture. A little bit chewy in the middle with a firm delicious outside. My pasta maker in an old fashioned manual style one, but you can also find some electric models. Eggs are an important ingredient and should be fresh. The recipe takes 2 cups of flour, 3 fresh eggs, ý teaspoon of salt, and ý teaspoon of olive oil. I like to use virgin olive oil for a milder flavor.

I take these ingredients and mound up the flour and make a hole in the center of it. Then I place the eggs, salt and oil into it. I slowly begin incorporating small amounts of flour into the center with a fork. Once all of the flour has been mixed in I knead the flour with my hands for about 10 minutes. If the mixture is too dry I add a small amount of water to the mixture. Once it is ready I begin rolling out the dough in the pasta maker, first at a thick setting until I get the desire texture and thickness. I then set the machine to the style of pasta I want and cut it into shape. Each little bit of form noodle are allowed to dry until they are boiled for dinner. I like mine freshly made.

Ravioli and tortellini are another favorite because you can add any type of filling you'd like. I am a big fan of rich creamy cheeses with spinach. After using the pasta maker to get the dough to the right thickness and texture it is very easy to use pasta molds or presses to make them the perfect shape, or if you are more adventurous you can try shaping it by hand. It is important to make sure that the pasta is sealed shut around the edges or the filling will leak out during cooking.

Now all that is left is choosing your favorite sauce to go with your fresh pasta! Sauce can be made from scratch too (there are tons of recipes on Pinterest), or to save time buy jarred sauce and add fresh garlic and herbs to suit your taste. Buon Appetito!
