This is a mildly spicy black bean burger recipe with butter and basil potatoes. It's a quick and easy vegetarian alternative to the burger and fries night. It's a two-part recipe--one for the black bean burger, and the other for the potatoes, so it's extra special.

I can't say I'm really much of a cook, so I'm always on the look out for something easy. A guy I work with always talked about black bean burgers, and I experimented with a number of different recipes until I discovered that I liked this one the best. It's easy to make, and it tastes pretty darn good. And best of all, it's vegetarian, so it's very good for you. That's kind of where I was going when I stumbled upon it.

The potatoes are sort of an experiment in trying to find the recipe to something I used to always order from Boston Market years ago. I loved their New Potatoes. It's a shame, but I have no idea where to find a Boston Market anymore, so I've had to invent my own potato recipe to compensate. I hope you like it.

Ingredients

  • 1 can black beans
  • 1 large egg
  • 1/4 cup plain bread crumbs
  • 1 clove garlic chopped
  • chili powder
  • salt
  • pepper
  • cayenne
  • 8 yellow potatoes cut into cubes
  • 2 tablespoons butter
  • basil
  • garlic salt

Instructions

  1. Pre-heat oven to 365-degrees
  2. Empty can of black beans into a large bowl, and mash them up
  3. Mix in garlic, egg, chili powder, cayenne, salt and pepper (use your own judgement on the spices--if you like it hot, slam it, otherwise, just a dash will do for taste)
  4. Stir in bread crumbs
  5. Prepare a cookie sheet with non-stick spray
  6. Shape 5-patties on cookie sheet with a large spoon
  7. Put cookie sheet into oven and cook each side for 10-minutes
  8. For potatoes, melt two-tablespoons of butter in a large bowl
  9. Hit the butter with a healthy dash of garlic salt and basil
  10. Cut up 8 yellow potatoes into small cubes
  11. Stir the potatoes into the butter until coated
  12. Microwave the potatoes for 8-10 minutes, depending upon your microwave
  13. Afterwards, place the burger patties on buns, with a side of potatoes
  14. Top the burgers with your favorite condiments, and enjoy
