Black Bean Lasagna Recipe

A Nice Twist on an Old Favorite

Protein is an important part of our diet, but it can not always be left to meat to fill our needs. Black beans are a great substitute for meat for pretty much anything. I have used it in chilli, I have made burgers from them and I have thrown them into pretty much any pasta dish we've ever had. What follows is one of my favourite lasagna recipes. I guarantee one small square and you'll be full.

Black Bean Lasagna Recipe

I've divided the ingredient list into three sections, followed by the necessary directions.

Mix and Set Aside the Following Ingredients

* 1 cup of skim mozzarella cheese, shredded

* 1 cup of quark cheese

* 1 cup of 1% cottage cheese

* 1/4 cup low fat Parmesan cheese, grated

* 1/4 cup low fat feta, crumbled

* 1 tsp basil

* 1 tsp oregano

* Dash of salt and pepper

Sauté the Following Ingredients

* 2 cups fresh mushrooms, sliced

* 1 clove garlic, minced

* 1 cup asparagus, chopped

* 1 jalapeno, finely chopped

* 1 red pepper, diced

* 1 small zucchini, shredded

* 2 green onions, diced

* 1 cup carrot, shredded

In 1 tsp of olive oil for about five minutes then mix in to cheese mixture.

Other Ingredients

* 19oz can of black beans, rinsed

* 680 ml can of Hunts Original tomato sauce (or use your own)

* 1 box of whole wheat lasagne noodles

* 1 c of skim milk mozzarella cheese, shredded (for topping)

Layer in a 9" x 13" Glass Baking Dish

Coat dish with fine layer of cooking spray. Spread a few spoonfuls of sauce, followed by:

* layer of 3 lasagna noodles

* layer of sauce

* layer 1/2 of beans

* layer of 3 lasagna noodles

* layer of sauce

* layer 1/2 of cheese mixture

* layer of sauce

Repeat once to use up remaining ingredients followed by another topping of three noodles, sauce and the shredded mozzarella. Cover the baking dish with tinfoil and bake in 350 degrees F oven for 45 minutes to one hour. Remove foil and bake an additional ten minutes.

This recipe makes nine servings and freezes well in individual containers. It also heats well in the microwave. I recommend slicing the lasagna and putting it into individual containers for storage rather than leaving in the baking dish as the bottom layer of pasta seems to glue to the glass once it has cooled.

We serve this black bean lasagna dish with a side of vegetable, salad and sometimes a slice of garlic toast. For a lunch, all that is needed is a side of fruit and something to drink.
