Sharing a Favorite Family Recipe - Broccoli, Rice and Sausage Casserole
Broccoli-Rice-Sausage Casserole Recipe is one that your whole family will love! My family sure loves it!We were invited to a "covered dish" one night at a friend's home. She has re-done her old family home place which was built in 1790 and wanted to have her neighbors and friends over.
I immediately thought about our family favorite - The Broccoli-Rice-Sausage Casserole. A neighbor-friend gave me the recipe about 30 years ago and all my family enjoys it.
The only thing wrong with it is that you mess up a lot of dishes so it is wise to double the recipe and make one for your freezer or just have a day of cooking and make several for your freezer. This is a great casserole to have on hand and can be served as a side dish or the main dish. It can even be served for Brunch or for Dinner with an entrée or as the main dish. This is great to serve at special meals like Thanksgiving and Christmas. It is delicious with a Curried Fruit or Fresh Fruit Salad.

Here it is! It is the same card that my friend gave me 34 years ago. You can sure tell that I have used this Broccoli-Rice-Sausage-Casserole Recipe many, many times and sure appreciate my good friend and neighbor for sharing it with us. I know it is their family favorite but now it is ours, too. Do you think it is time for me to make a new recipe card? I will put that on my list of things to do.
This is one of our family favorites! I am so glad my friend, Nancy Wilkinson, shared this one with me.This freezes very nicely so make two while you are at it and then freeze one for later.
- 1 lb sausage, hot or mild - browned
- 1 medium onion, diced to saute
- milk as needed
- grated cheese for the top, sharp
- 1 cup dry rice
- 1 box frozen chopped Broccoli
- 2 cans mushroom soup
- Brown Sausage and drain
- Saute Onion
- .Cook Broccoli according to box directions and drain
- Cook Rice according to directions
- Grate Cheese for the top
- Mix Broccoli, Rice, Sausage and Onion in bowl
- Add 2 cans Cream of Mushroom Soup Place in casserole dish, salt and pepper to taste. You can add a little milk if it seems too thick.
- top with grated cheese
- Bake at 350 degrees for 30 to 45 munites
- .After Cooking, soak up excess grease with paper towel
Step 2: Get All Your Ingredients for your Broccoli-Rice-Sausage Casserole
Grocery List for Broccoli-Rice-Sausage Casserole
- 1 pound sausage (hot or mild)
- 1 box chopped broccoli
- 2 cans Cream of Mushroom Soup
- 1 cup dry rice
- 1 medium onion diced
- milk as needed
- grated cheese for the top
Note: Recipe serves 10 people
Step 3: Get your oven ready to bake your Broccoli-Rice-Sausage Casserole
Preheat Oven to 350 degrees.
Step 4:Brown Sausage and Sauté Onion
Using a large skillet for your sausage, crumble and brown while stirring.Using a small skillet for your onion, sauté in dab of butter or margarine.Be sure to Drain both - I place on paper towels so the excess grease will be soaked up. Sometimes, I use coffee filters.
Step 5: Cook Rice and Broccoli
Follow the directions on the packages for cooking your rice and broccoli. I used the kind of rice that you cook in a bag but you can use whatever kind you desire.
Step 6: Grate the cheese for the top of your Broccoli Rice Sausage Casserole
I use Sharp Cheddar Cheese Cheese. I was always told that extra sharpe would make it too grainy.
Using a grater, grate your cheese for the top of the casserole and set aside until needed.
Step 7 Add Sauteed Onions to Browned Sausage and Drain
I use paper towels to drain my sausage and onions but have also used coffee filters. They work very nicely.
Step 8: Drain Broccoli
Drain the Broccoli using a colander.
Step 9: Mix everything together
Use a large bowl to mix the broccoli, rice, sausage and onion together.
Step 10 Add 2 Cans of Cream of Mushroom Soup
Mix in 2 cans of cream of mushroom soup and stir until it is all covered with the soup.
Step 11: Spoon into Casserole Dish and Top with Cheese
Place in Casserole Dish and Top With grated Cheese
Step 12: Bake your Broccoli-Rice-Sausage Casserole
Bake at 350 Degrees for 30 - 45 Minutes
If there is any grease floating on top you can soak it up with a paper towel without messing up your cheese. Since all ovens seem to be different, you may need to adjust the cooking time accordingly.

Baking Dish and Basket Serving Set
These are so nice especially if you are carrying your casserole to a covered dish.
Do you have a good casserole dish?
I really like this clear Pyrex one that comes with this set of 14 pieces. It also has a basket that it sits down in after cooking and a plastic lid. This makes it great for taking to Covered Dish events. Our church has them fairly regular and I always like to use this dish for easy transport. You will notice that it is the one I used to take to this Cover Dish Dinner. You can see the basket in the photo below.

Helpful Hints and Suggestions for This Dish
Be sure to squeeze out all excess water when draining the broccoli or casserole will be too soupy.You can add a little milk if it seems too thick but I have never had to do that.Salt and Pepper before adding cheese.Use Sharp Cheddar and not Extra Sharp.Recipe says that you can add almonds or chopped celery but I have never done this either.Looks very pretty served with Curried Fruit. Add baked eggs for a great brunch.After cooking, soak up excess grease with paper towel.

I probably will not bake the eggs in the muffin liners but bake them right in the muffin tin. They were so good. The Tomato Aspic was the perfect side dish for the Casserole. It tasted like a congealed Bloody Mary. I wish I had thought to take a picture because it did make a beautiful plate.
