Make Cookies from Boxes of Cake Mix!

An easy way to get moist cookies with fabulous flavors is to start with cake mix, and you'll find some great ways to do that here.

The recipes are simple, the cookies are delicious, and the ingredients are usually found in your pantry, so there's no excuse not to try them!

Moist Cake Cookies

This is a super simple way to make fresh, homemade cookies! They're always moist and soft, and I love to make them with the extra sugar on top for that subtle crunch of sweetness.

I usually use Devil's Food cake mix to make them, but you can use just about any flavor, from strawberry to spice cake. This time I used Betty Crocker Super Moist cake mix in Triple Chocolate Fudge because that's what was in the pantry. They have tiny chocolate chips in the batter, which aren't overly noticeable in the finished cookie, except for the occasional bursts of extra chocolate.

1/4 cup sugar

1/2 cup vegetable oil

2 eggs

1 box cake mix

Plus about 1/8 cup sugar for decoration (optional)

Preheat oven to 350 degrees F. Mix all the ingredients together in a large bowl. Scoop out teaspoonfuls and shape into balls. Dip tops of balls into a dish of sugar (optional) and place onto a cookie sheet about 2 inches apart. Bake for 9 to 11 minutes. Cook on wire racks. Makes about 30 cookies.

Chocolate Chai Latte Cookies

I love these cookies! These gooey, chocolaty, spicy treats are bursting with a wonderful array of flavors and textures. Aside from the delicious taste, a perk of these cookies is the heavenly aroma floating through my kitchen as I bake them!

Chocolate Chai Latte Cookies

1 box chocolate cake mix

3 tablespoons instant chai tea latte mix (or substitute listed below)

1/2 cup (1 stick) unsalted butter, softened

1 large egg

3 tablespoons milk

1 cup milk chocolate chips

(Substitute for chai tea latte mix: 1 ½ teaspoons ground cinnamon, 1 teaspoon ground cardamom, 1 teaspoon ground ginger, and 1/4 teaspoon ground cloves.)

Icing Ingredients

1 ½ cups powdered sugar

1 ½ teaspoons ground cinnamon

3 to 6 teaspoons of water

Preheat oven to 350 degrees Fahrenheit. In a large bowl, mix together the cake mix and chai tea latte mix, or substitution spices, with a fork or whisk.

Mix in the butter, egg and milk, making sure to combine it thoroughly. Then stir in the chocolate chips.

Scoop teaspoonfuls of dough onto ungreased cookie sheets and bake for 9 to 11 minutes. Cool cookies for a few minutes on the pans, then remove to wire racks.

For the icing, combine the powdered sugar and cinnamon in a small bowl. Then add in the water, one teaspoon at a time, until smooth and your desired consistency.

Once the cookies are at least slightly cooled, drizzle the icing over the top, making sure you've put waxed paper or plastic wrap below the racks to catch the extra icing. Store the cooled cookies between sheets of waxed or parchment paper in an airtight container. Makes about 3 to 4 dozen.
