Easy to Make Capsicum Rice

Portions - Serves 5
Precooked - Rice 4 cups
Capsicum - 3 medium sized chopped into small pieces
Onions - 2 medium sized chopped into long strands
Curry leaves - 4 -5 in number
Mustard seeds - quarter teaspoon
Oil - 3 tablespoons (any vegetable oil)
Red Chilli Powder - half a spoon
Salt to taste
Step by Step Instructions
Heat the oil in a pan.
Add the mustard seeds, let them splutter.
Add the curry leaves and onions.
Fry the onions until light brown.
Add the capsicum and cook on low flame till the capsicum becomes tender and cooked.
Add salt, chilli powder and fry for few seconds.
Transfer from the pan to a large bowl.
Add the cooked rice.
Mix well without squashing the rice.
Transfer to a serving bowl. Serve hot.
Points to Remember
- Do not mix in hot rice. Let the rice cool down and then start the mixing.
- Do not squash the rice when mixing, if you squash the rice it will be difficult to mix. Gently mix.
- Choose different colors of capsicum to make the dish colorful!!
