Best Casserole Recipes

Making dinner for the whole family every night can be a daunting task. But, short of hiring a cook or going out all the time this is what many of us are faced with at the end of every day.

So I say why not make it easy on ourselves. Make a casserole quickly and heat up the leftovers on another night.

I'll be putting my favorite casserole recipes on this lens and I'll update it when I find some new favorites. All of the casserole recipes I'll add are relatively easy to make and very, very delicious.

You can add some of your own favorite casserole recipes at the end of this lens as well.

1 lb. ground beef

1 can green beans (drained)

1 family size bag of tater tots

2 cans cream of mushroom soup

1-2 cups shredded cheddar cheese

1. Pre-heat oven to 350 degrees.

2. Brown ground beef in pan (drain off grease).

3. Add cream of mushroom soup, milk, seasonings and tater tots.

4. Stir until all tater tots are well coated with beef mixture.

5. Place in greased 9 x 13 baking dish.

6. Sprinkle cheese on top.

7. Bake for 30-45 minutes.

Chicken and Rice with Broccoli Bake

At my house this is a favorite! We all call it "grandma's chicken dinner" because the recipe originated from my grandma. Over the past decade I have made changes that make my family happy.

2 cups white rice (brown if you'd like)

3 cans cream of chicken soup

3/4 cups miracle whip or mayonnaise

2 cups shredded cheddar cheese

2-3 large boneless skinless chicken breasts cubed

1 bag frozen broccoli

1 cup buttered bread crumbs

1. Pre-heat oven to 350 degrees.

2. Cook chicken, drain off excess liquid.

3. Cook rice according to package directions.

4. Combine soup and Miracle Whip until well blended.

5. Cook broccoli according to package directions.

6. Add cooked chicken and broccoli to soup mixture and stir well.

7 Put rice in the bottom of a greased 9 x 13 pan.

8. Pour soup mixture over rice.

9. Top with shredded cheese and then buttered bread crumbs.

10. Bake for 30-45 minutes or until bread crumbs turn a nice golden brown.

Be Creative

When I make casseroles I love to play around with the spices and seasonings. I rarely measure anything and dump in whatever sounds good at the time. Each time I deliver a meal to the table that tastes different than the last time.

My family loves garlic so I usually end up using quite a bit and then work out from there. I love oregano and tend to use that quite often as well. Another of my favorite seasonings is the McCormick Montreal Steak seasoning. Not only is it great on steaks and burgers but I like it in the tater tot casserole too.

Baked Beef Ravioli

2 9 oz packages frozen ravioli (you can use all meat, all cheese or a combination of both)

1-1 1/2 lbs. ground beef

1/2 cup chopped onion

6 cloves garlic minced

1 14 oz. can diced tomatoes, undrained

1 10 3/4 oz. can condensed tomato soup

1 tsp. dried basil

1 tsp. dried oregano

1 1/2 cups shredded mozzarella cheese

1/2 cup shredded parmesan cheese

1. Pre-heat oven to 375 degrees

2. Cook ravioli according to directions on package, set aside and keep warm.

3. Cook groud beef, onion, and garlic....drain excess fat. Stir in undrained tomatoes, soup, basil and oregano. Gently stir in cooked ravioli.

4. Transfer to a greased 9 x 13 baking dish.

5. Sprinkle with mozzarella and parmesan cheeses.

6. Bake, uncovered for about 20 minutes or until mixture is heated through.

When adding milk I don't generally measure, I add to the soup until the consistancy is nice and creamy.

Sausage Breakfast Casserole

I love this recipe! You can make it up the day before and allow it to sit in the refrigerator overnight.

2 1/2 Cups Seasoned Croutons

2 Cups Shredded Cheddar Cheese

1/2 Cup Milk

1 Can Cream of Mushroom Soup

6 Eggs

1/4 Teaspoon Dry Mustard

2 1/2 Cups Milk

Pre-heat oven to 325 degrees

1. Cook sausage and drain off excess fat.

2. Spread croutons evenly in bottom of lightly greased 9 x 13 baking dish, sprinkle 1 cup of cheese over croutons, top with sausage.

3. In a large bowl whisk 2 1/2 cups milk, eggs, and the dry mustard. Pour over layers in dish. In a small bowl combine soup and 1/2 cup milk, spoon soup mixture evenly over mixture in dish. Cover and chill for at least 2 hours or up to 24 hours.

4. Bake, uncovered for 45 minutes. Sprinkle remaining cheese and bake for an additional 5-10 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before serving.

I have this tool and I love it! It's great for breaking up your bulk meat while browning so you don't have large clumps. You can now have a nice even amount of sausage or hamburger throughout your casserole.

Like most people I am always looking for new recipes to feed my family. If you have any tried and true family favorites I'd love to try them here!
