My Recipe For Celery Soup

This delicious recipe for celery soup is easy to make, full of natural flavour and filling too! Add a splash of cream for that extra touch of luxury or have it just as it is for a healthier celery soup which is lower in calories.

When I first started making this soup I couldn't have had an easier recipe. I simply added more chopped celery along with some stock, or milk, to a tin of Campbells Condensed Soup.

But, that was in the days when I didn't really cook.

These days, my recipe for celery soup is still easy, just as tasty, and even healthier because I use all fresh ingredients

Ingredients - What you will need to make up this healthy celery soup recipe


1 head of celery finely sliced

1 tbs olive oil

1 finely chopped onion

1 sprig fresh thyme

600ml vegetable stock

300ml semi skimmed milk

chopped fresh parsley or celery leaves to serve

I really like soup, and sometimes I just simply throw together whatever vegetables I have left over and simmer them in a suitably seasoned stock before blending into a soup, at other times, when I want something perhaps a little more special, I like to draw inspiration from my cast array of cookbooks.

When Making Celery Soup Some People Prefer To String Their Celery - To String or not to string?

Some people think that when cooking with celery it is much better if it is stringed first.

Stringing the celery is easily done with a vegetable peeler if that is what you prefer, personally I don't bother stringing my celery though.

      your soups sound very delicious. For me I would like my soups without the MILK you really don't need milk in soup (did you know milk is one of the worst foods you can put into your body-its full of puss & bad bacteria, only use in moderation, or best of all don't eat it!)(check me out on the net?).

      No doubt: yes, I string it. I know because when I´m too lazy to do it, or I have to cook very quicly, I don´t do it and I regret, after.

      i do not like the strings that remain stuck in the teeth so i would rather string the celery, it is so much more pleasant to eat

        I use a v-slicer for celery, but never noticed the strings having a taste.

        I slice mine very fine so strings are not an issue.

        I chop it finely, so the strings are really short and fine - therefore not a problem. I like my soup to have some texture to it :)

        no! I never string celery. That's fiber we need. I cut slices for the younger kids in my family so the strings don't choke on them. Everyone in my family loves the crunch and no one ever asks to string them.....they come with strings...deal with it while you still have the teeth to do so.

      Instructions For Making The Celery Soup - Just follow these simple instructions to make a wonderful, healthy soup

      Put the oil and around 3tbs water into a large saucepan, heat then ad the celery and onion. Stir together and heat on high until sizzling. Reduce the heat and cook, covered, for around 10 minutes until the celery and onions have softened.

      Add the thyme and stock, season with sea salt and freshly ground pepper then bring back to the boil and simmer (partially covered) for 15 minutes.

      Either use a stick blender or a blender to blend the soup until smooth. (I use a stick blender similar to the one here, it is so easy to use and it blends soups in the same pot, which saves on cleaning up a regular blender! My previous regular blender rarely got used because I hated the clean-up operation after using it but this stick blender is easy to clean as the stainless steel shaft just goes straight in the dishwasher).

      Check the seasoning and serve sprinkled with the chopped parsley.

      Tips To Vary The Celery Soup Recipes - Try some of the following to vary the celery soup recipe:

      Sometimes we want something a little different to the basic celery soup, so. I will often find myself tweaking the recipe to bring something new to the soup. Why not try some of these yourself when you make the celery soup.

      1. Cream Of Celery Soup:

        Add a dash of cream or creme fraiche to the soup to make a lovely, creamy celery soup.

      2. Carrot And Celery Soup

        Add one or two finely chopped carrots to the ingredients and cook the soup as usual adding a little more stock if needed.

      3. Leek And Celery Soup

        Substitute the onion for a finely chopped leek.

      4. Stilton And Celery Soup

        Simply crumble in a generous piece of stilton towards the end of cooking and stir until the cheese has melted into the soup.

      5. Potato And Celery Soup

        Add a diced potato to the ingredients as cook as normal, add a little extra stock if needed.

      6. Spicy Celery Soup

        The addition of a few chilli flakes will give the celery soup a nice, warming kick.

          What a delicious and richly elegant soup and pretty as can be, my favorite color is any shade of green. I did try your idea of using some potatoes as well, they thicken a soup right up and I added some extra milk. Very healthy and satisfying!

          @tobydavis: I find that making soup can be really satisfying, it is quite easy to do, even for the novice cook, and you know exactly what is going into it. Homemade soup makes a really satisfying and nourishing meal, especially on these chilly winter days!

          I don't really care for celery like that. I only use it for chicken stock and occasionally cut a few in my husbands salad since he does like celery. But your recipe, I will be a using when I make a celery soup for my hubby. Nice Lens.
