My Recipe For Celery Soup
This delicious recipe for celery soup is easy to make, full of natural flavour and filling too! Add a splash of cream for that extra touch of luxury or have it just as it is for a healthier celery soup which is lower in calories.
But, that was in the days when I didn't really cook.
These days, my recipe for celery soup is still easy, just as tasty, and even healthier because I use all fresh ingredients
Ingredients - What you will need to make up this healthy celery soup recipe
1 head of celery finely sliced
1 tbs olive oil
1 finely chopped onion
1 sprig fresh thyme
600ml vegetable stock
300ml semi skimmed milk
chopped fresh parsley or celery leaves to serve

I really like soup, and sometimes I just simply throw together whatever vegetables I have left over and simmer them in a suitably seasoned stock before blending into a soup, at other times, when I want something perhaps a little more special, I like to draw inspiration from my cast array of cookbooks.

Some people think that when cooking with celery it is much better if it is stringed first.
Stringing the celery is easily done with a vegetable peeler if that is what you prefer, personally I don't bother stringing my celery though.

Instructions For Making The Celery Soup - Just follow these simple instructions to make a wonderful, healthy soup
Put the oil and around 3tbs water into a large saucepan, heat then ad the celery and onion. Stir together and heat on high until sizzling. Reduce the heat and cook, covered, for around 10 minutes until the celery and onions have softened.
Add the thyme and stock, season with sea salt and freshly ground pepper then bring back to the boil and simmer (partially covered) for 15 minutes.
Either use a stick blender or a blender to blend the soup until smooth. (I use a stick blender similar to the one here, it is so easy to use and it blends soups in the same pot, which saves on cleaning up a regular blender! My previous regular blender rarely got used because I hated the clean-up operation after using it but this stick blender is easy to clean as the stainless steel shaft just goes straight in the dishwasher).
Check the seasoning and serve sprinkled with the chopped parsley.

Sometimes we want something a little different to the basic celery soup, so. I will often find myself tweaking the recipe to bring something new to the soup. Why not try some of these yourself when you make the celery soup.

Add a dash of cream or creme fraiche to the soup to make a lovely, creamy celery soup.

Add one or two finely chopped carrots to the ingredients and cook the soup as usual adding a little more stock if needed.
