"Cheesecake is a food rich in history, culture, tradition and ceremony. It is not the invention of a single person but a result of culinary evolution. The origins of cheesecake are grounded in ancient agricultural practice, tempered by local resources, and tweaked by technological advancement.

In short, cheesecake is a perfectly good example of the dedicated human quest for good tasting food. Cheeseless cheesecakes (sweet, rich custard pies) began to appear in English cookbooks in the 17th century. Chess pie, a popular Southern American favorite, is descended from these."

But it does what you want a cheesecake cookbook to do: it gives you 50 mouth-watering recipes, plus 17 extra recipes from "special places" such as The Plaza Hotel and The Regent Beverly Wilshire (all of which are simple enough for the average baker to handle). The lack of pictures is a plus for me. I don't find myself stressing over whether or not my finished product looks as perfect as the one in the photo, as I do with other cheesecake cookbooks with pictures.

The book has yet another bonus: instructions on how to avoid cracks forming in the cheesecake as it bakes, how to give a cheesecake away without giving away the bottom of your springform pan, and how to slice the cheesecake as perfectly as restaurants do. Ingredients

  • 24 oz softened Cream cheese
  • 2 cups Vanilla Wafer crumbs
  • 1/3 cup melted Butter
  • 1/2 cup Sugar
  • 3 Large Eggs
  • 2 tablespoons Flour
  • 1 cup Irish cream liqueur
  • 1 teaspoon Vanilla
  • 1 cup grated white chocolate

Instructions

  1. Preheat oven to 350 degrees
  2. Combine the cookie crumbs and butter in a medium-size bowl. Press on the bottom of a 9-inch spring-form pan. Bake crust in oven for 5 minutes. Remove and set aside.
  3. Cream together the cream cheese and sugar. Beat in the eggs, flour, liqueur and vanilla until smooth. Pour mixture over crust and bake for 40 minutes.
  4. Turn off oven. Leave cake in for another 15 minutes. Remove from oven and let cool.
  5. After cheesecake has cooled, sprinkle white chocolate on top. Refrigerate overnight.

      I don't know how wild it is, but one of my favorite is a Chocolate Ganache Cheesecake with Candied Pansies. Yum! Love this lens! I'll have to come back and check out more of the links. I have lensrolled it to my cheesecake lens.

      I've never had a "wild" cheesecake... but I made up my own cheesecake recipe once!! I wanted an easy cheesecake without raw eggs. It just had cream cheese, sweetened condensed milk, and vanilla, and went into a graham cracker crust! Very rich.
