Chicken noodle soup has long been known as one of the best healthy comfort foods. When we think of chicken noodle soup, we feel emotionally secure. It is what our mother had given us when we were sick with a cold. Or even with the flu. I remember my mother saying, "Have some soup. It will make you feel better." And it seemed like it did. Chicken noodle soup is a tradition that is passed along from generation to generation. The best kind of soup is homemade soup.

Enjoy this homemade recipe by me. Something that I had made many times but never wrote it down. I am that type of cook that adds the ingredients and try the different seasonings until it taste just right.

Early Days of Chicken Soup to Present

Chicken soup was prescribed as a cure for the common cold as early as ancient Egypt (civilization for ancient Egypt began around 3150 BC). There is no reference as to when the first chicken soup was created, but it is mentioned that tough chickens were boiled and de-boned after cooking, and then the chicken is broken up and put back in the water, thence "Chicken Soup". Persian physician Ali Sina Balkhi, (known as Avicenna), in the 10th century, referred to chicken soup's curative powers in his writing. In the 12th-century the Jewish physician and sage Moses Maimonides wrote that chicken soup "has virtue in rectifying corrupted humours," and recommended it as nutrition for convalescents; Maimonides also recommended the soup for people suffering from hemorrhoids and the early stages of leprosy.

Health Benefits of Chicken Noodle Soup

Recent studies have shown that Chicken soup may actually have some health benefits. A resent study at the University of Nebraska Medical Center in Omaha, showed that the blend of nutrients and vitamins in traditional chicken soup can slow the activity of certain white blood cells. This may have an anti-inflammatory effect. Their research was published in 2000 in the Scientific Journal.

Chicken soup is easy to prepare, nutritious, and easily digested. Warm soup can clear the sinuses because of the steam ventilating into the nasal passages, serving as a natural decongestant. In a study, prolonged cooking of a bone in soup increases the calcium content of the soup.

The Soup that was Almost Axed - Campbell's Chicken Soup with Noodles

Campbell's condensed soup in the 1930s featured a "chicken soup with noodles". But a slip of the tongue on the "Amos 'n' Andy" radio show in 1930 referred the soup as "chicken noodle soup". Until then, the soup was not selling and Campbell's was preparing to discontinue the soup. After the broadcast, letters began pouring in asking for Chicken Noodle Soup.

Today Campbell's products are sold in 120 countries around the globe, with Tomato Soup being the best seller of the soup line.

Since the Campbell Soup Company beginnings in 1869, they have became the world's largest soup manufacturer. They also are a leading producer of juice beverages, sauces, and biscuits?

My Recipe for My Daughter

Chicken Noodle Soup is one of my specialties. The recipe I use varies in the way I make it each time. This is my own recipe, never written down, one of those experiments that comes from my head. As with the many of my recipes, I will throw this and that together; a handful of this and several shakes of that. When I do use a recipe, rarely do I follow it completely the way it is written. This irritates my daughter, since she was never interested in cooking as she was growing up. Her excuse, "Mom...this is a different age. We do not have to be domesticated. My guy will do all the cooking and cleaning for me."

When she was in College, she would call me up and ask how to make various dishes. Since I usually don't write my recipes down (written only in my head), I would have to think through the steps and I actually visualize her irritation on the other end of the phone.

Some time back, we picked our daughter from her apartment, 118 miles one way. She told me that she would like to help make "Homemade Chicken Noodle Soup". Of course at the time I had envision her saying the day that we would be making this, "Mom, I am too tired. Can you just do it?"

But she ended up being a good helper.

I had prewritten the recipe, knowing that we would probably make changes along the way. We even decided to video tape it; put it on YouTube and added it to this article.

This is a recipe that was made in a slow cooker, but a large stock pan can be substituted. Adjust the seasoning to your taste. (Hopefully, my overseas friends can convert it to their metric system.)

Chicken and Vegetables

Start with the Ingredients

3 1/2 to 4 lbs. frying chicken

1 large onion (or 2 medium) - diced

3 carrots, sliced

3 celery stalks, sliced

1 tsp. salt

1/2 tsp. pepper

2 tsp. lemon pepper

1 tsp. basil

1/2 tsp. thyme

2 tsp. parsley flakes (crushed)

1/2 tsp sage

2 tsp. beef bouillon (or 2 cubes)

2 tsp chicken bouillon (or 2 cubes)

1 1/2 to 2 c. 100% orange juice

2 1/2 to 3 c. egg noodles

5 c. of water

1 c. of water for bouillon

Wash chicken thoroughly, peel off skin and cut off any excess fat. Place chicken in slow cooker with 5 cups of water (or enough to cover chicken). Follow the directions on the slow cooker. In most cases, heat at 300 degrees until boiling, then simmer 3 to 4 hours. Chicken will be done when the meat falls off the bone.

During the time that you are cooking the chicken, cut up the vegetables and set aside.

When the chicken is done, take it out of the cooker, debone the chicken and break it into pieces. Strain the broth for any small bones through a strainer. (You can also strain it through cheesecloth to trap some of the grease. The fat can also be removed by chilling the broth overnight and skimming off the layer of fat from the top.)

Add back all of the broth to the slow cooker. Place the bouillon in the cup of hot water and mix until dissolved. Add the bouillon mixture and the orange juice to the slow cooker. Combine the chicken, vegetables and spices to the slow cooker. Heat the soup to boil and then simmer for at least an hour or until vegetables are tender.

Cook the egg noodles according to the directions, and then add to the pot. Cook another 30 minutes.

Makes about 4 1/2 quarts

Serves 10 (or 4 very hungry people)

Added notes:

After we made the video, (a little hard to make ingredient changes, during filming), I did add an additional teaspoon of lemon pepper and basil then what is listed above. Even then, I found it less seasoned to how I usually cook it. But seasoning is an individual taste. Feel free to experiment and adjust the seasoning to your liking.

Cut the recipe in half for smaller portions. Even after all these years of cooking, I still haven't figured out to cook for a few people.

Soup can be placed in smaller containers for the freezer. Can be frozen for several months.

Lemon pepper is a great substitute for salt. You can use more of it in place of the salt. Read the ingredients before you buy the spice. Make sure it has lemon powder and not salt in it. Better yet, there are recipes online to make your own lemon pepper. I might grab one of those and put it in my blog Recipes for All Check back on the blog to see if it is there. Beware of MSG in seasoning. Look at the labels to make sure the seasoning is of healthy ingredients.

This is my first attempt on YouTube with making the soup recipe. Originally my daughter was supposed to talk through the recipe, but she wouldn't stop laughing.       I tried out your orange juice trick yesterday. It made the best tasting chicken noodle soup I've ever made!! Didn't taste orange but it sure enhanced the flavors of the vegetables and chicken and added a richness to the soup that has always been missing. I used cloves for the spice.

      [in reply to Intuitive] Glad you liked it. I've done some other experiments with it, like adding lemon juice and even vinegar. They all tasted good. I can't remember how the vinegar recipe went. But I think the OJ is the best.

      I tried to make chicken noodle soup a couple of months ago -- with rice actually. I was told to add rice to it, but not how much, so I added the full huge bag of white rice. It turned into semi coooked dry rice, and the bottom burned. I'll never do that again! I'll have to give this a try sometime.

      I loved mom's chicken noodle soup - with wagon wheels! - as a kid. My husband is allergic to chicken, so I had to come up with a winter soup recipe with lots of healing power, but no meat. It's good, but not quite the same!

      Loved this lens, Sandy. Wish I had a big bowlful right now. As much as I enjoy chicken soup, I think my favorite chicken dish is Tandoori Chicken. It's traditionally done in a 900 degree clay oven. I make it in a gas oven turned to Broil. I leave out the red food coloring, but (on the rare occasions when I make it) I grind all my own spices and marinade it the spice mix, lemon juice, yogurt, onion, garlic.       I want to know this-how many different ways can someone say YUMMY! OMG, that soup looks great. Question, I have made a chicken noodle soup similar to this but never have thought about adding Orange Juice. Do you think using regular juice squeezed from oranges and using some orange rind would be just as good? I think I am going to make this soup within the next few days.       I still have not made this soup yet. The day I was going to make it I did not any oranges. It is still on my list to make. I cannot wait!       I have loved chicken noodle soup all my life, including Campbell's. But now I have sworn off tinned and packaged foods because of the high salt content.

      Hi Sandy, you Chicken Noodle Soup recipe is very similar to mine, i guess they can only vary so much hey. The orange juice is interesting, never heard of that one before, i might just have to try it myself. What i like about Chicken Soup is that it's one of those warming winter foods thats great for getting the kids to eat vegetables. Heres my Chicken Noodle Soup. I like to sprinkle chilli flakes on top for an extra kick.

      orange juice and lemon pepper sound great in chicken noodle soup. I'm going to try that one of these days. - I just made a big pot of turkey noodle soup today and cut-up a bunch of spinach to add to it, I feel like Popeye now.       You cook just like I do--make up your own recipes and don't even follow them any more than you do the recipes of others. A history lesson on Campbel's Chicken Noodle Soup was fun--sometimes a slip of the tongue can have positive results, if only it were alway so.

      Now your Chicken Noodle Soup recipe fascinated me--you have really taken some risks in your experiments with success being your reward. It would have never occured to me to use orange juice in any soup, but I will certainly give it a try on your word. Beef boullion in Chicken soup, another surprise--you live on the edge when you get in that kitchen! My husband doesn't care for noodles, so I make chicken dumplig soup instead--as far as I'm concerned, dumplings are like noodles. He doesn't care for cooked carrot either, so I don't use them. I do use a few mushrooms--usually portabella and sometimes white cap, the mushrooms provide. Shitake mushrooms are a wonderful variation and can be used more lightly as they have such distinctive flavor. I frequently use a little white wine whick pairs with the shitakes and makes the soup almost elegant. I also add whatever sweet pepper I have on hand--red, orange, yellow, green--I usually have at least two of them on hand. My final and absolutely secret ingredient that I would never share with anyone--it's that top secret--I add butter about 10 minutes before serving. Butter added early in the cooking process get looses it's butteryness. I've never tried lemon pepper but am also concerned about the sodium, so I use sea salt--a little goes a long way. I have a pinch dish of coarse sea salt on the counter at all times. Your herb combo sounds nice---never thought of sage, but it makes sense with chicken. I would guess it adds a warm coziness to the soup. I use Italian sesoning and garlic. Will have to try a dash or two of lemon pepper. Otherwise, we make our chicken soup exactly the same! Thank goodness for a comfort food that is actually good for us!

      As I was reading I was thinking about leaving a comment about how handy this would be tomorrow (supposed to get 12-18" of snow here in Connecticut) but then read the following:

      "Campbell's condensed soup in the 1930s featured a "chicken soup with noodles". But a slip of the tongue on the "Amos 'n' Andy" radio show in 1930 referred the soup as "chicken noodle soup"."

      Probably one of the coolest facts I've read on Squidoo in a while. Great lens!

      this is one great lens!! I love it... I remember my childhood days when I would always get chicken noodle soup whenever I wasn't feeling well... it was my Mom's way of making me feel better for being stuck at bed... worked every time...       I love to make chicken and turkey soups. I do like to add milk to make the broth heartier, and I love bowtie pasta. I never write down the seasonings though. I'm a bad record-keeper. Great lens. More people need to make it from scratch - nothing like it. :o)

      Try adding 1 tsp of curry powder to your chicken noodle soup. Its what adds the wonderful yellow color to the broth without the strong flavor of the curry. Adds a savory touch...Thanks for the recipe!
