Chicken Piccata

Lemony chicken piccata is a fast, fresh family favorite

To me, chicken piccata is a miracle for 3 reasons: 1) it has only 5 ingredients; 2) it takes less than 15 minutes to make; and 3) it appeals to kids as well as adults. Sold!

I make this lemon chicken dish for dinner at least twice monthly, sometimes more. It showcases the happy marriage of lemon, butter and wine and could not be simpler. Try it & let me know what you think.

Chicken Piccata

(Serves 3-4)

2 tablespoons butter

1 pound boneless, skinless chicken breast halves, preferably thin-sliced

1/3 cup dry white wine

juice of 1 lemon

fresh parsley (optional), cleaned & chopped

~Rinse chicken breasts and dry them well with paper towels. (You can skip the drying and the dish will still be delicious, but the chicken won't brown as well if not dried before cooking.)

~Melt the butter in a large skillet over medium-high heat.

~Add chicken and saute until golden brown on both sides, about 4 minutes.

~Add wine and lemon juice, and simmer about 8 minutes or until chicken is tender.

~Remove chicken from pan and place on serving dish. Ladle pan juices over chicken.

~Top with chopped parsley, if desired. (I like a ton of parsley on my chicken piccata, while the kids skip this step.

Butter -- key to a tasty chicken piccata -- is a rather controversial food topic, with some (like me) arguing it can be part of a healthy diet, while others say steer clear. What's your take?

My secret weapon

My chicken piccata recipe was adapted from this book, which includes several of my other favorite dishes, like salmon & leeks, ham with redeye gravy, and "down and dirty shrimp" (I serve this in a hollowed-out bread bowl, and you have to taste it to believe it). Everything is super, super easy and fast.
