Chicken Sandwiches Come in Many Different Shapes and Sizes
Chicken sandwiches are a lot more than a piece of chicken stuck between two slices of bread. Although it knew its origins when the Earl of Sandwich decided to eat the meat provided for him in this fashion, the sandwich has come on leaps and bounds in the intervening centuries. Sandwiches are big business in the food industry in modern times and chicken is surely one of the most popular of all ingredients. This page is dedicated to the once humble chicken sandwich and just a fraction of the endless ideas we can use to spice up and better enjoy our chicken sandwich.
The sweet and sour chicken bruschetta pictured above is a version of an open sandwich and where this chicken sandwich journey now begins.
Ingredients
2 1” thick slices of crusty bread
3oz chicken breast meat
Generous handful of baby spinach leaves or other salad greens
2 rings of pineapple
1 tbsp sweet and sour sauce
1 clove of garlic
Extra virgin olive oil
Salt and freshly ground black pepper
Method
Chop or tear the chicken in to small pieces. Mix it in a small bowl with the sweet and sour sauce. The sauce can be hot or cold, depending upon preference. Lay the spinach and pineapple rings on a plate as show to the right.
Toast the slices of bread on both sides under an overhead grill. Peel and crush the garlic clove and rub it over the hot toast. Drizzle the toast with olive oil and season with salt and pepper. Lay it on the plate and spoon the sweet and sour chicken on top.
Chicken, Tomato and Garlic Mayo Sandwich
Ingredients
1 small chicken breast fillet
2 slices of bread
4 slices from a medium tomato
2 tsp mayo
1 garlic clove
2 fresh basil leaves
Salt and pepper
Method
Put the mayo in to a small bowl. Peel the garlic clove and grate it on top. Stir well. Divide it between the two slices of bread and spread evenly with a knife.
Slice the chicken in to about six pieces. Slice the tomato.
Lay the chicken on one slice of the bread, the tomato on top and season with salt and pepper. Tear the basil leaves and scatter them on top last of all. Place the second slice of bread on top, slice as desired and enjoy.
Hoisin Sauce Chicken and Beansprout Sandwich
Ingredients
1 chicken leg and thigh
Small handful of beansprouts
4 small lettuce leaves
2 slices of bread
1 tbsp hoisin sauce

Method
Hoisin sauce is very popular in Chinese cooking and is also used as a dipping sauce. For this chicken sandwich, simply tear the meat of the chicken leg and thigh and add them to a bowl with the beansprouts. SPoon in the hoisin sauce and stir well.
Butter the two slices of bread and lay the washed and dried lettuce leaves on top of one slice. Spoon on the chicken mixture and add the second slice of bread. Press down, cut and serve.
Note the deliberate absence of salt and pepper, as the hoisin sauce is likely to include all the seasoning required.
Chicken, Pineapple and Cheese Bread Roll
Ingredients
1 bread roll
1 chicken breast fillet
1 ring of pineapple (fresh or canned in own juice, not canned in syrup)
2oz cheddar or other hard cheese
Large fresh basil leaf
Salt and pepper
Method
Cut the bread roll in half horizontally and toast both sides under an overhead grill.
Slice the chicken breast fillet and lay it on top of the bottom half of the toasted roll. Season with salt and pepper. Place the pineapple ring on top. Grate the cheese and carefully press it on top of the pineapple with your fingers. Place under the grill until the cheese bubbles and melts - a couple of minutes.
Season with more pepper and scatter the torn basil leaf over the top.
Chicken Salad with Soured Cream and Dill Sandwich
Ingredients
1 chicken leg and thigh
2 slices of bread
2 large lettuce leaves
6 pitted black olives
4 slices of tomato
2 tsp soured cream
Pinch of dried or fresh dill leaves
Salt and white pepper
Butter
Method
Butter the two slices of bread. Shred the lettuce leaves and halve the black olives. Arrange on one slice of bread as shown to the right.
Tear the chicken meat from the bones and lay on the lettuce bed, along with the slices of tomato. Season with salt and white pepper. Add the soured cream and carefully spread it evenly across the other ingredients. Scatter with the dill leaves and add the second slice of bread to serve.
