Chocolate Mayonnaise CupCakes

Putting Everything Together

First your going to want to mix the sugar, water, mayonnaise or miracle whip together to a very creamy consistency. Put this aside so you will be able to sift the cocoa, flour, baking soda and salt. When you have sifted together add ingredients slowly to the creamy batter to better blend together. Having the paper cups ready in the cupcake pan pour batter into cups 1/2 way. The batter should ribbon when being poured. Now add eight to ten of your favorite chocolate chips carefully not to let them sink to the bottom of the cups. Fill the rest of the cups leaving 1/4 inch of cup is still exposed.

Ingredients Needed

Mayonnaise takes the place of the milk,oil or shortening and eggs ordinary cakes and cupcakes are made with and keeps the cake very moist. When i first herd of using mayo in a cake i thought to myself "Nasty". But being the polite little girl that i am i allowed my grand mother to tie me to a chair and force feed me this delicious snack. When i think back on it now it was to funny how i fought from eating the best cupcake i have ever had. OK enough about me. Lets get to the good stuff " Yummy.

This is what you will need.

1cup flour

1/4 cup cocoa

3/4 tsp baking soda

1/2 cup sugar

1/2 cup mayonnaise or miracle whip

1/2 tsp vanilla

1/2 cup water


Cooking


Pre-heat oven to 350Deg. Fahrenheit, place pan in the center of the oven and bake for 20 minutes. Check the cup cakes to ensure they are baked completely. When finished place pan where it can cool to room temperature. Add any frosting you like to the tops, Most people say butter cream is the best but I prefer chocolate. Oh Yea one more thing while your waiting for the cupcakes to Finnish you can always sample the bowl "Yummy". I hope you enjoy this desert as much as I have.

      I make mayonaise cake all the time but have never turned them into cupcakes. Will have to do this one day. This is my husbands favorite cake. Voted up.

      These look delicious, and I am tending to bake more cupcakes then cakes..not that I bake often, but its nice for portion control.

      Wow who would ever think mayonnaise would make cupcakes taste so yummy. I tried your recipe and I have to say that cupcakes were very moist and they didn't dry out in a few days like the ones made without mayo. Thanks for the recipe I'll be sharing it with my friends and family.
