How to Make Coconut Cake
Wondering how to make this? Here's a nice and quite easy recipe for coconut cake. It is a fluffy, white cake with coconut frosting. It makes a great addition to the dessert table or a thoughtful gift for the neighbors. This recipe is made with a sugary frosting, but healthier sugar-free cool whip can be substituted. Either way, it's a delicious treat any time of year.

Easy and delicious
1 cup (2 sticks) butter, at room temperature
2 cups sugar
3 cups sifted self-rising flour
1 cup unsweetened, coconut milk
1 teaspoon pure vanilla extract
Preheat oven to 350 degrees F.
Grease and flour 3 (9-inch) cake pans. Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour and milk alternately to creamed mixture. Add vanilla and continue to beat until just mixed. Divide batter equally among prepared pans. Bake for 25 to 30 minutes or until done. Cool in pans 5 to 10 minutes. Invert cakes onto cooling racks. Cool completely before frosting.
Frosting For Your Cake
I make a simple vanilla frosting then I cover with flaked coconut. It looks better than shredded coconut! You can also use any type of frosting you want. Try it with chocolate frosting, it's really delicious! Or for something a little more festive, make a red or pink icing, sprinkle with flakes. Looks goregeous!
Home made frosting is better, but if you prefer a ready made frosting, here's a good one. Very easy to spread. Betty Crocker products are great.
I use coconut flakes instead of shredded coconut. it give a nice touch to your coconut cake.
