If you like rice and coconut like I do, then you will surely like the coconut rice recipe that is included here. I am a big fan of the coco nut and I love just about anything made with or from it. If you are the same way, then here you will find plenty of delectable dishes to keep your taste buds happy!

I will never forget the first time I tried it - it was THAT good! I stopped off at a local Thai restaurant in the city where I am from and ordered it because I had never tried it and it sounded interesting. Boy was I hooked. That first mouthful was amazing and I literally didn't even want to eat the rest of my food. Ever since then I always order it and I am rarely disappointed.

Super Simple Recipe!

Make minute rice according to package directions but use one cup of coconut milk in place of one cup of water and sprinkle in some nutmeg. For jasmine rice it is 1 cup rice to 1 cup coconut milk and ½ cup water. Once rice is cooked, stir in salt and pepper, and 2 Tablespoons butter.

      yes i do. i grew up with cocunuts. i swam in the river with coconuts. we cleaned the floor with cocunut husks. we used the cocunut shells as spoons and forks.
