Having a childhood cyst overdosed with Penicillin made Stephen hyper allergic. From this he developed a keen interest in eating for health.

Why Cooking To Improve Health?

I am sure by now many of my readers will know that processed foods and the companies that prepare them have for many years been concentrating on increasing profits and taste. Unfortunately this preoccupation with the bottom line has led to many bad habits, and recent studies by those in the know have shown that this has led to sacrificing the health of the consumers.

I have been a lifelong sufferer from Asthma, and members of my family have suffered from coronary disease and now one of my cousins has developed a potentially terminal brain tumor. This and my move from the UK to Canada, with it's resultant dietary changes followed by me fairly quickly being diagnosed as suffering from high blood pressure, has led to me taking a long hard look at my own eating habits. It seems that the higher salt content in North American cuisine was the main culprit.

Now modern medical thinking for example Dr's Oz and Joel Fuhrman has discerned a trend in eating habits that relates to increases in certain diseases. More significantly it shows thatt the right eating habits can virtually eliminate most diseases altogether, and in some cases it can even reverse disease previously thought to be incurable.

The concept arose after the good Drs noticed that certain countries lacked some of the killer diseases, and that it appeared to be related to the dietary habits of the people of those countries. This started the research off, and Dr Fuhrman has spent a good deal of his life studying the foods and the dietary changes we need to make in order to both lose weight, and improve our bodies immune system to the point that in many cases even terminal diseases can be controlled, and then gradually defeated through diet alone. This is due to the strengthening of the bodies own immune mechanisms.

Dr Fuhrman has had a great deal of success in this and patients have seen dramatic health improvements. This does not mean that you should rush off and buy one of his cook books and abandon your medications. However, there is new hope, and for many the change of diet will help, but even where it does not cure a person, it will not do any harm. Always consult your own MD before making any changes in your medications, and get check ups before abandoning any drugs that you are on.

The Amazing Findings

Eating Right Can Lead To Super Immunity!

It seems that our dietary habits changed when the industrial revolution led to the packaging and processing of foods in factories. Big industry moved in, and of course the concentration was on the bottom line to improve profits for farmers and shareholders. This led to the use of chemical fertilizers and thence to insecticides and bug repellants etc. This increased yields and profits for all concerned. However not sufficient studies were performed on the affects of these changes on our health and the environment.

We then went through two major World Wars that led to rationing and shortages, so even more effort went into making fields more productive and animals grow more quickly so that hormones, steroids and anti-biotics were all tried in the animals diets. Further experiments in improving the taste of packaged and processed foods included the use of ever increasing amounts of salt and refined sugars being used in foods.

Hardly surprisingly some of the affects of these changes were not good for us. Overuse of antibiotics has led to many people suffering from released Candida Albicans in their systems. Whilst it occurs naturally in the stomach it is in a yeast form. Once released it becomes a fungus, with a hard almost impenetrable shell, and it is now believed by many doctors that it is a root cause of the prevalence of cancers in the Western World. It is interesting to note the increase of cancer in the Eastern countries that have adopted Western style fast food diets.

Dr Fuhrman has written many books on healthy eating, and believes that following the correct dietary habits can almost eliminate many of the worst diseases. He has seen great success with Diabetics, coronary patients, those with high cholesterol and high blood pressure, all of which he believes can be controlled by diet. This is preferable to the use of expensive drugs, that often have severe side affects attached.

The main cause of diabetes is the overuse of refined sugar in our diets. This started with the post war craze for soda pops driven by the industrial might of Pepsico and Coca-Cola. Refined sugar is not actually addictive, but then neither are tobacco products, that is not in the sense that Cocaine is.

However they do produce dopamine and some people have an addiction to this. What happens is we indulge in the habit and that releases dopamine which makes us feel good for a while. Once the dopamine wears off our brains kick in and we need another dose of the substance that led it the release of dopamine, and thus the habit can become addictive.

Refined sugar is used far too often in food to make it taste better, and many manufacturers use it now. Salt, which they used to use is known to lead to high blood pressure, which has the risk of heart attack and stroke attached.

Just like the tobacco companies before them, food processors have tried to stop studies that show these issues. However Drs Oz and Fuhrman are not going to be stopped. They believe that Drs should first do no harm, and then that they should actually try to prevent disease, so that the cost of cures and treatments can be brought down. This is definitely the right thing to do, and I hope you agree.

Dr Fuhrman has spelled out for his readers what they need to do. Eating for Health, to prevent and cure diabetes, heart issues, and cholesterol and blood pressure problems. He has books on how to achieve Super Immunity and how to disease proof your child as well as lead to sustainable weight loss for those with sugar weaknesses. Who would not want that?

You are right that is because cooking at high temperatures, like frying modifies the fats and makes them more harmful.

i agree that right methods of cooking also affect the food we eat. Too much frying isn't good

Yes, it is true if we eat until we feel full then we have already gone about 20% beyond our capacity as there is a delay in our stomachs sensing fullness. These days when there is plenty we tend to eat with our eyes, and that is why there is so much obesity. High use of salt sugar and agricultural chemicals certainly do not help. Dr. Fuhrman's book includes guidelines on which food should be organic and those where this is not so important. This table alone makes the book an asset even if you do not want to eat his way.

I have tried many of the recipes and can attest that they are delicious.

To eat healthy, we must look at food not as the enemy but as the friend that nourishes us so we only choose what is good for us. Also, to eat at 75% of our capacity so our stomach can deal with food digestion more effectively. However, I am aware that many foods nowadays are contaminated with chemicals. It is sad.

@smine27: I agree the substances added to processed foods have definitely affected my health over the years. Salt and sugar levels in processed foods in America and Canada are much higher than permitted in Europe and I was quite sick when I first immigrated to Canada, because of this. The Eat To Live cookbook changed that and I now feel much better again.

@TerriCarr: I am wondering how long before the sick realize there is potential for a class action suit against the big food conglomerates, like they did with the tobacco companies? as in many ways the synthetic food is worse!

This is indeed a great book. Finally, people are starting to get the point that fake food doesn't lead to good health.

@Merrci: Reading about the book before we bought a copy made us think long and hard about our own eating habits. We felt that a total change may be a bit like trying to stop smoking. The current advice is to phase it in gradually it seems easier and is working well for us so far just 2 weeks in to date. All the recipes we have tried to date have been great!

Lots of info here. Thanks for sharing it. I do think it's a great idea to change our habits. I like the idea of starting with a couple of recipes a week.
