Cornbread Casseroles for Thanksgiving or Anytime

Updated on January 8, 2017

Cornbread Casserole Recipes for Thanksgiving or any time

Tired of the usual dinner rolls to go along with your Thanksgiving feast?

Trying to sneak a veggie in to the too-picky toddlers, perverse pre-teens, or even the totally resistant teens?

Then below is the just the recipe for you.

This is a recipe that is recognizable to many since I believe it was first introduced by the Jiffy Muffin maker many years ago. I first tried this recipe at a cooking class that introduced new recipes as well as classic and easy recipes from the past. This cornbread casserole has been a hit at many of the potluck dinners I have attended. I always bring at least a dozen copies to every event. I rarely walk out with even 1 copy left.

Easy and great to make ahead to heat and serve. Can also share the oven with the turkey if you prefer to serve hot andfresh.

This easy to make cornbread casserole recipe is ideal for other meals or occasions.

Quick and easy Cornbread Casserole

I personally have used this a Breakfast, and sides to Lunch & Dinner. Makes a great snack, too!

Heat oven to 400 degrees.

In large mixing bowl, add:

1 stick of butter, melted

8 oz. sour cream

1 can cream corn

1 can kernel corn, drained

1 box Jiffy corn bread.

Mix until well incorporated..

Pour into a greased casserole or cake pan ~ NOTE: I use a spray oil in casserole dish.

Bake for 40 to 45 minutes.

Cornbread casseroles are perfect for baking and taking. Between the cook time, glass casserole dish and the insulation of my carrier, the cornbread is hot for hours. How convenient and easy is that?

Savory and Sweet Cornbread Casserole

1 pkg. Jiffy corn bread mix

3/4 c. oil

1 sm. can pimientos, chopped

4 eggs

1 tsp. garlic salt ~ NOTE: I skip the salt and use 1/3 tsp. Garlic POWDER.

2 cans cream style corn

Mix all together and put in casserole dish or 9 x 13 inch. Add small package of sharp cheddar grated cheese on top. Bake at 350 degrees for 45 minutes.

For the quick and easy cornbread casserole, I have made this for so many years, I cannot remember. I do not see any eggs? There should be two in this casserole. For many years, I added the butter, but do not even do that now. It comes out beautifully without all the calories of a stick of butter.

What a great idea! I may improvise - depends on whether the cornbread mix contains products with sulfites, but the principle is great, even if you use home-made cornbread with it. Thank you!

When I was married to my ex, he insisted on cornbread for each dinner ... no sugar could be added. Since then, I make cornbread very rarely ... but these sure look tasty!
