This is a recipe that is recognizable to many since I believe it was first introduced by the Jiffy Muffin makers many years ago. I first tried this recipe at a cooking class that introduced new recipes as well as classic and easy recipes from the past. This cornbread casserole has been a hit at many of the potluck dinners I have attended. I always bring at least a dozen copies to every event. I rarely walk out with even 1 copy left.
Easy and great to make ahead to heat and serve. Can also share the oven with the turkey if you prefer to serve it fresh and hot right out of the oven.

Although I have have been known to take a corn casserole or two to someone's house for Thanksgiving dinner or Christmas, I most often take one to events or holidays during the spring and fall months. It really is delicious as a side dish to a barbeque cookout. Like my favorite accompaniments chicken and ribs slathered in BBQ sauce. Sound good?

A Cornbread Casserole is Easy to Take Along to Potluck and Dish to a Pass Dinner
Like a Lasagna casserole, a pan of this doesn't spill and slosh. That makes it an idea dish to transport to other places in a insulated casserole carrier like mine made by . I like to take it right from the oven, seal it with foil or a silicone lid, and throw a handtowel on top for a little extra insulation. I then put it in the carrier right away to guaranteed it keeps warm for hours. Artic Zone
- 1/2 cup (1 stick) butter, melted
- 2 eggs, beaten (optionall
- 8 ounces (1 cup) sour cream
- 1 can (15.25 ouncesl kernel corn, drained
- 1 can (14.75 ounces) cream corn
- 1 box (8.5 ouncesl Jiffy corn bread
- In large mixing bowl, add all ingredients.
- Mix until well incorporated.
- Pour into a greased casserole or cake pan ~ NOTE: I use a spray oil in casserole dish.
- Bake for 40 to 45 minutes.

The basic recipe created by Jiffy does have a few variations.
This recipe that I have made for years shown above does not include eggs which would be good for those with egg allergies. I have also increased the temperature to 400°. Although all ovens do vary, I feel the increase in temperature firms up the middle of the bread to be less like a very wet bread pudding. If you like it even firmer for cutting individual servings for potluck dinners, I have also had great success in turning down the oven temperapture 25 degrees and cooking for an additional 15 minutes.
If you would prefer to use eggs, use the original recipe time of 35-40 minutes and 375° oven temperature may be suited to have the eggs set well.
Some versions change the types and quantity of corn. I think if you are missing one of the ingredients, you just might find a version to work with your pantry goods.
More variation of this recipe include the "kick it up a notch" additions like the egg bake version below with pimiento and cheddar cheese, and much more in the online recipe world including some with jalapeno hot peppers and/or extra creamy cheesy additions.
Savory and Sweet Cornbread Casserole Also Known as Corny Bread
1 package Jiffy corn bread mix
3/4 cup oil
1- 4 ounce can of pimientos, chopped
1 teaspoon garlic salt (Optional: For low sodium diets, use 1/3 teaspoon garlic powder)
2- 14.75 ounce cans cream style corn
1- 6 ounce package shredded sharp cheddar cheese (Reserve for topping)
Mix all together, (less cheese) and put in casserole dish or 9 x 13 inch.
Sprinkle cheese on top.
Bake at 350 degrees for 45 minutes.
Let cool for 10 minutes before serving.
