This is a family favorite

We love Cornish Hens. One Hen will serve two people. It is so delicious and the rice stuffing s tops it off. Actually you can do so much with Cornish hens they can be baked and grilled..


Cornish Hen with rice Stuffing

Cook time: 1 hour
Ready in: 1 hour 30 min
Yields: 2 people

Ingredients

  • 1 Cornish Hen, washed
  • 1 cup rice, cooked
  • 1/2 cup red onion, diced
  • 3 small peppers, diced
  • 1 celery stalk, diced
  • 1/4 cup fresh parsley, diced
  • 1 cup fresh spinach, chopped
  • 1 small can mushrooms
  • 1/2 cup almond accents, diced
  • 1 can cream of celery soup
  • 1/2 stick butter no salt
  • 1 - 2 tablespoons Greek Seasoning

Instructions

  1. Cook rice as directed. Saute in butter Onions and celery and peppers then add cook rice and add Greek seasonings. Add mushrooms and almonds and soup.
  2. Pour lemon juice on top of Hen and sprinkle with Greek seasoning. Stuff rice in to the Cornish Hen and wrapped in aluminum foil. Cook for one hour until done.

We love chicken

      I don't think I have tried Cornish hen. In fact, I don't think there are some here in the philippines. Perhaps I can try my luck in some specialy stores. I'm always up for something new to explore. My taste buds are already tingling. :)
