Cucumber and Red Onion Salad

I love a fresh, cold salad with crunch.

I have been making cucumber salad for at least two decades using the same recipe here, minus the red onion. One day I had some leftover red onion from another recipe and decided to throw it into the cucumber salad. I have never looked back! While I love the cucumber salad as is, the red onion adds more zing and so much color to the plate.


  • 1/4 cup white vinegar
  • 1/4 cup olive or grapeseed oil
  • 1 tsp quality mustard
  • 1 tsp. sugar or stevia
  • 1 tbls. fresh dill or 1/4 tsp. dried
  • 4 cucumbers, peeled and sliced
  • 1 cup coarsely chopped red onion


  1. In a large bowl, whisk together vinegar, oil, mustard, sugar and dill.
  2. Add cucumbers and red onion, marinate for 2-4 hours.
  3. Drain and serve.

      I actually have onion and cucumbers often - but usually the sweet Vidalia onions. I love cucumbers, you know?

      Your cucumber and onion salad brings back memories of my Mom's cuke recipe, a bit different, but I'm sure yours is just as delicious.

      This looks wonderful! I love the idea of using stevia in it. The sugar is part of the reason I haven't made it in awhile. Must try your recipe! Wonderful photo too!

      Your photograph pops! This looks SO good. My mom always makes a sweet and sour cucumber salad from the time the first cukes are big enough to pick until the last ones come off the vine before frost. It is a favorite childhood summer memory, and a classic dish at our house. She never added oil to hers, and always used sugar and apple cider vinegar, but otherwise, quite similar. The red onion would make it that much prettier and piquant. Want some now. Thank you.
