Dad's Favorite Dinner for Father's Day Meatloaf!
What's Dad Eating This Father's Day?
After being married for over 30 years, I have a pretty good idea of what my husband, my kids' Dad, likes to eat! I asked him in a text this morning what his favorite meal that I cook would be, and he surprised me with his answer: Meatloaf! Even funnier, he just texted back asking if we could have that tonight! Guess I'll be going to the store later.
Meatloaf is such a down-home comfort meal. I love to serve it with scalloped potatoes and green beans with bacon, and either cornbread or homemade rolls.
There are countless variations of meatloaf, but here is the recipe that makes my husband happy! When I'm being really smart, I make two while I'm at it and freeze one in the pan I'd bake it in. So when I'm ready, I just pop the frozen loaf in the pan, cover and bake. Enjoy...
Let's Make Some Meatloaf Magic!
It's about as easy as cooking gets!
2 lb. ground sirloin or ground chuck (the better the quality of meat, the better the meatloaf!)
1 cup Quick Oatmeal
2 tbsp Ketchup
1 tbsp dry onion flakes
Liberal sprinkle of Montreal Steak seasoning
Salt & Pepper
8 oz. can Tomato Sauce
1/2 cup each green and red pepper, chopped fine (food processor!)
Place uncooked ground beef in large bowl. Add the onion flakes, salt, Montreal seasoning, pepper, and eggs; stir thoroughly or work with hands until meat is all well blended. Stir in tomato sauce and chopped peppers. Add about 1/2 cup of the oatmeal and gradually stir in a little at a time until the loaf is the right consistency. It should hold together easily but be quite moist, yet not dripping wet.
Line your baking pan with the new parchment paper, which totally eliminates clean-up! If you don't have it, spray the pan with olive oil or other cooking spray. Place meatloaf in pan(s), smash down with spatula to eliminate air pockets. "Frost" the top with ketchup. Seal tightly with foil or cover. Bake at 350 for one hour, removing cover the last 15 minutes so top will brown a little.
Allow to stand 20 minutes before slicing if possible. Serves about 4 people. Place leftovers in covered container in fridge or freezer. The meatloaf is always better the next day!
