Delicious Cheese Recipes
Cheese can be used for main dishes, snacks, desserts, and appetizers.
Much of the popularity of cheese is attributed to its relatively mild flavor and ease of use in cooking. The most popular process cheese, American, is made from natural Cheddar blended with similar varieties.
In recipes using cheese, low temperatures and short time cooking are recommended. A versatile food, cheese lends itself to appetizers, snacks, sandwiches, fondues, and main dishes.

1 cup buttermilk
2 tablespoons shortening melted
1 cup all-purpose flour
1 cup shredded cheese
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
Beat the eggs and add the remaining ingredients in order listed and beat until smooth. Grease a heated griddle. Pour the batter onto the hot griddle. Turn the pancakes as soon as they are puffed and full of bubbles. Serve immediately.
Herb Cheese Bread
1/4 cup finely chopped green onions
2 garlic cloves, minced
1/3 cup reduced-fat margarine
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1 loaf (1 pound) unsliced French bread, halved lengthwise
3/4 cup shredded reduced-fat Cheddar cheese
In a small nonstick skillet, saute onions and garlic in margarine for 1-2 minutes. Stir in the seasonings. Brush over cut sides of French bread; sprinkle with cheese. Wrap each piece of bread loosely in a large piece of heavy-duty foil; seal edges of foil.
Bake at 400 for 20-25 minutes or until heated through and cheese is melted. Cut each piece into six slices. Serve warm.
3 ounces sharp process American cheese, shredded
2 slightly beaten egg yolks
1 cup soft bread crumbs
1 cup milk, scalded
2 stiffly beaten egg whites
Reserve 2 tablespoons of the cheese. Combine the remaining cheese, the egg yolks, the bread crumbs, and the hot milk.Fold in the egg whites.
Turn into two 1 1/2 cup casserole dishes and top with the reserved cheese. Bake at 325 degrees for 35 minutes or until a knife inserted comes out clean. Serve immediately.
Easy Cheese Dumplings
These are the perfect accompaniement for chicken or beef stew.
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
3 tablespoons shortening
3/4 cup milk
1/4 cup shredded sharp cheese
Mix the flour, baking powder, salt and cheese into a bowl. Cut in the shortening throroughly until the mixture looks like meal. Stir in the milk.
Drop the dough with a spoon onto hot meat or vegetables in a boiling liquid. Cook uncovered for 10 minutes or until the dumplings are fluffy. Serve immediately.
