Potato coconut Smash
Potato is one of the most important staple crops in human diet around the world.It is a nutritious vegetable which contains carbohydrate.vitamins,and minerals.It is favorite to everyone especially for children. Whether it is mashed, or baked , potato is a comfort food.Because of their neutral starchy flavor they serve as a good complement to many meals. Their texture varies slightly depending upon their preparation. Here I am describing you about a tasty and healthy potato dish . When coconut and potato mixed together along with onion , it will give a wonderful taste.Please try and enjoy.
Which oil do you prefer for cooking?
- 3tsp oil
- 4 medium size potato
- 2 medium size. onion, chopped
- 8 nos Green Chillies, cut into 1/2
- 1 inch piece Ginger, chopped
- 1tsp Salt
Spices to be ground
1/2 cup coconut
1 inch piece cinnamon
1 tsp soaf(Aniseed)
2 tsp chili powder
1/4 tsp Turmeric powder
1 tsp mustard seed
2 spring curry leaves
1 tsp oil
Method of preparation
1.In a pressure cooker Cook the potatoes.
2.When cooled Peel , Smash them and Keep aside.
3. Take 2 tbs oil. Sauté the Onion, Ginger and Green chilly along with salt.
4. When the color changes to golden brown add smashed potatoes and mix well in a slow flame.
5. Grind Coconut, aniseed, chili powder,Turmeric powder, cinnamon, with enough water and add to the potato mix.
6 Add ½ cup of water and mix well till the gravy thickness.
7. Season with mustard seeds and curry leaves.
- For cooking potato microwave oven can be used.
- Prick potato and micro high for 5 minutes
- Adding salt to onion at the time of frying fastens the process.
