Diabetic Kansas City Steak Soup

Just the other day I shared with you a tasty diabetic recipe that I prepare for my father because he is diabetic and he has trouble eating the foods that he likes to eat because he really likes to eat rich foods.

So here is a nice soup that is really like a beef stew but it is very diabetic friendly it’s a Kansas City Steak Soup that my father really loves and if you have someone who is diabetic and love stews they will love it too.

Diabetic Kansas City Steak Soup

Ingredients

Extra lite olive oil

12 pounds of lean ground beef

1 cup of chopped onion

3 cups of frozen mixed vegetables

2 cups of water

1 14 can ounce of crushed plum tomatoes

1 cup of sliced celery

1 beef bouillon cube

1/2 to 1 teaspoon of black pepper

1 10 ounce can of fat free beef broth

1/2 cup of all-purpose flour

Methods

So we can start putting this recipe together lightly grease the Dutch oven with olive oil. Heat over medium high heat until hot. Add beef and onion. Cook and stir 5 minutes or until beef is browned. Add vegetables, water, tomatoes with juice, celery, bouillon cubes and pepper and let it cook until it comes to a rapid boil get it a little stir, while this dish is boiling stir together the beef broth and the flour and keep stirring until it is as smooth as you can get it. When you get your broth and flour mixture smooth add it to the Dutch oven mix it very well and bring then turn down the Dutch oven to low heat and let cook for an additional 20 minutes stirring every 5 minutes ten turn off the Dutch oven serve and enjoy.
