Salt and spicy chicken wings are popular, tasty and one of the easiest ways in which to prepare chicken wings. The marinading is not essential but really does improve the end result where time permits.

  • Prep time: 2 hours

Ingredients

  • 8 chicken wings
  • 2 tbsp vegetable oil
  • 1 tsp hot chilli powder
  • 1/2 tsp sea salt
  • 2 or 3 green lettuce leaves
  • 1/2 small white onion
  • Chopped chives to garnish

  1. Pour the oil in to a large glass bowl and stir in the chilli powder and salt to form a smooth paste. Add the chicken wings and carefully turn them in the oil with a wooden spoon to evenly coat. Where time permits, cover with plastic wrap and refrigerate for a couple of hours.
  2. Preheat your oven to 400F/200C. Spread the wings in a single layer on a roasting tray and pour over the remaining oil. Cook for thirty minutes.
  3. Remove the tray from the oven, lift the wings to a wire tray with cooking tongs and leave them to rest for ten minutes while you shred the lettuce and finely slice the onion. Lay the salad on the bottom of a plate, the wings on top and garnish with the chopped chives.

If you like your chicken wings a bit spicy, this may be the perfect recipe combination for you. This is just a basic, supermarket curry sauce but you could use any variety of your choosing, from tikka masala sauce to vindaloo!

Ingredients

  • 8 chicken wings
  • 1 lb jar curry sauce of choice
  • 1 8 to 10" naan bread
  • 2 tbsp Indian spiced onions

  1. Put your oven on to preheat to 375F/190C.
  2. Place the chicken wings in a large casserole dish and pour on the curry sauce. Carefully stir the wings through the sauce with a wooden spoon to ensure even covering/coating. Put the lid on the casserole and cook for forty minutes.
  3. Take the casserole dish from the oven and lay it on a heatproof surface. Carefully remove the lid and leave it to rest for ten minutes. If you have bought the naan bread, heat it up per the instructions on the packet and slice for plating. Spoon the onions in to a small ramekin for service.
  4. With your cooking tongs, lift the wings one by one to a serving dish and plate up your meal components for service as shown in the image above.

When we think of eating chicken wings, however they may have been cooked, we tend to imagine picking them up with our fingers and eating them straight from the bone. This recipe idea is a little bit different in that the meat is firstly removed from the bone before being incorporated in a salad wrap.

  2. Lightly oil a roasting tray and lay the wings on it in a single layer. Season well with sea salt and cook for thirty minutes. Remove to a wire tray to rest for ten minutes.
  3. Shred the lettuce leaves and slice the onion. Season with salt and pepper and mix together.
  4. Put the chicken wings in a serving dish and plate along with the salad. heat the wraps per the guidelines on the pack and serve on a separate plate.
  5. Lay a little salad on each wrap as shown below and pull some meat off the wings to go on top. Add a little cranberry sauce, roll, wrap and enjoy.

Sweet and sour chicken is of course a classic Chinese combination. This recipe looks at the concept a little differently by serving a sweet and sour vegetable stir fry with crispy, deep fried chicken wings.

  • 4 chicken wings
  • 1 beaten egg

  1. Add the flour to a large plastic dish with a lid. Dip the chicken wings in the egg before laying them in the flour. Put the lid on the dish and invert a few times - don't shake it like a cocktail or you may break the wings! For an extra thick and crispy coating, this process should be repeated.
  2. Deep fry the wings at 350F/180C for eight to ten minutes, depending on their size. Remove them to a plate covered with kitchen paper and check the juices run clear. Leave them to drain and rest while you make the stir fry sauce.
  3. This is of course an extremely basic stir fry but there are a great many more vegetables you could add with a little imagination.
  4. Bring the oil up to a smoking hot heat in a work. Half the onion half again and add it with the whole mushrooms. Stir fry for about thrity seconds before adding the sauce to heat through. This should take about a further minute.
  5. Carefully pour the sauce in to a serving dish and garnish with the basil. Plate alongside the drained wings.
