Chocolate Covered Strawberries are perfect for Valentines Day. Almost every woman I know loves chocolate and when you mix them with strawberries they are a perfect combination. Dipped strawberries are not just a female delicacy though, men also like dipped strawberries and will appreciate the extra effort and delicious dessert for a treat after a romantic dinner.

I can honestly say that when it comes to chocolate covered strawberries in my town I am pretty much the expert. I have made chocolate dipped strawberries my signature at all of my kids high school graduation parties and it's pretty much expected now. The process is actually pretty easy, time consuming, but not hard at all. The trickiest part of dipping a large quantity of strawberries is figuring how to store them for the party.

Chocolate is a universally loved food group for most women, we joke about it, laugh about it, but chocolate is pretty serious in the world of females. Everything can be cured with chocolate; PMS, a bad day, a bad mood, a friendship, and just the blahs. I tease friends that if I get cranky just throw chocolate at me and I'll be fine. They have, and still do.

So what happens when I coat my second favorite food, strawberries, with chocolate? I'm in heaven. Seriously, the way to a woman's heart is through her sweet tooth. Men, this is a big tip, if you want to make an impression on your special girl, wife, fiancee, or girlfriend present her with chocolate covered strawberries, a few flowers, a mushy (yes you heard me mushy) card and you will score points.

First Gather Your Supplies - Supplies for Dipping Strawberries

Many people have asked me, what is a double boiler? I don't have one, so I how do I dip strawberries?

A double boiler is is a key essential for making candy and is simply a pot inside a pot. Many people have two different sized sauce pans and often they fit right inside each other and create a double boiler without them even knowing their function. The function of a double boiler is to boil water in the bottom pan which indirectly heats and warms the surface above.

A double boiler is handy for melting not only chocolate, but caramels and anything you don't want to get too hot.

About an inch of water is placed in the bottom pan, then the second pot, without the lid is placed on top. My pan set came with a metal bowl which fit inside one of the pots, this is also a double boiler method. You can use any metal or glass bowl if the bottom of the bowl fits snugly into the pan without touching the water.

I use waxed paper when dipping strawberries, but have recently bought a roll of parchment paper because this is safe to put in the oven and back cookies.

The strawberries just peel off this paper smoothly without sticking or peeling off the strawberry. Works well for fixing and drying chocolate covered cherries.

 

Steps for Dipping Strawberries - Dip one pound of strawberries in 30 minutes

You really can dip strawberries in as little as 30 minutes from start to finish

  1. Wash and pat dry firm ripe strawberries. Set aside to fully dry
  2. Melt chocolate (almond bark OR 1 cup of chocolate chips with 1 TSBP shortening OR melting chocolate) in double boiler.
  3. Dip dried strawberries in melted chocolate and place on waxed paper or parchment paper
  4. Allow to Dry, remove from waxed paper, serve and eat.

Dipping Strawberries, Step by Step - How to Make Your Own Chocolate Covered Strawberries

There are many ways of actually dipping strawberries and melting your chocolate. Since I normally dip A LOT of strawberries at one time the microwave method does not work for me. I do like the idea of creating a chocolate strawberry bouquet and will have to try that this year.

How to Store Chocolate Dipped Strawberries

When you need to prepare strawberries ahead of the party

Chocolate dipped strawberries will remain in good condition for a couple of days when stored properly in a cool environment where they can "breathe. A good containers for storing chocolate covered strawberries are the original plastic grocery containers with holes. You should have plenty of room as some strawberries will be culled as non-dippable, and some will be eaten in the process.

Storage DO's:

1. Fold paper towel on the bottom of the container, in between the fold sprinkle baking soda

2. Carefully lay strawberries on paper towel, place another paper towel (which serves to absorb any strawberry juice)

3. If using large tray lay strawberries on single layer and cover loosely with plastic wrap. Allow strawberries to breathe as the natural gases from ripening fruit will spoil them faster if sealed too tight.

What NOT to Do:

1. Do not forget the paper towels at the bottom

2. Do not stack strawberries into a pretty pyramid and place in refrigerator, the juice will eventually drip down to the bottom layer and you will end up with mushy strawberries. Not a pretty sight, this happened to me after one late night of dipping.

      I have dipped strawberries before and I have to say it is one of my favorite desserts to eat. I made a chocolate strawberry pie the other day and only wish there were some left. There's nothing quite as good especially so close to Valentine's Day as chocolate and strawberries.
