Easy Dinners

Updated on October 2, 2014

Quick and Simple Dinners That Taste Great

I am of the belief that Sunday should be a day of rest. Our family goes to church and when we get home we all get in our comfy clothes. Even though it is Sunday, I still have to make dinner at the end of the day. Dreading working on a long process to make a dinner on my rest day, I decided that Sundays would be our easy dinner nights. There are some great products out there that taste delicious and make dinner a quick fix process while still having a good meal.

Slow Cooker Meals:

I love using the slow cooker, you just put something in and it does the rest. I highly recommend that every family have one because they make preparing a meal so simple. I also love how the food aroma fills the house while the food is cooking.

This is our all time favorite slow cooker recipe, see adjustments below. Original recipe found at allrecipes.com

We just buy rolls, salad, and sides the previous day to go with it.

Box Dinner:

I have been impressed with some boxed dinners they have on the market now. If you have the meat then you can get a number of box kit meals and put together a great dinner. Here are some of our favorites...

Hamburger Helper - Honey Mustard Chicken

My family absolutely loves this dinner! The first time I tried it I thought it was restaurant quality it was so good. I have adjusted the amount of glaze, as we prefer about half the amount that is included, but this is usually a meal we have at least two times a month.

Wanchai Ferry - Spicy Garlic Chicken

This is an oriental meal with a kick! I love the taste of this sauce and have not been able to find anything quite like it. It allows you a new experience from the every day meals and to add fun try eating with chop sticks that night.

Romano's Macaroni Grill - Chicken Alfredo

Who doesn't love Italian food? With this box dinner kit you actually get to bring the restaurant to your home. Chicken alfredo is the favored pasta dish in our home and is usually devoured within minutes.

Frozen Dinner:

Wanchai Ferry actually makes premade frozen dinners in various varieties as well. If you visit their site, www.wanchaiferry.com, you can take a quiz to find out which dinner is a match for you and also get coupons. One of our favorites that they only have in the frozen dinners is the Shrimp Lo Mein.

If you'd rather, you can even freeze your own dinners, which also makes an easy dinner solution.

Homemade hummus, homemade crackers or artisan bread chunks, and cutup melon or veggies. Everything but the melon can be prepared ahead. We have one or two nights a week where we don't feel like cooking, and since dinner tends to be a lighter meal anyway, for health reasons, such a simple meal works very well for us.

chickpeas, sesame seeds, or garbonzo beans?

I have only recently started using a slow cooker, and I am excited to find some delicious looking recipes here! The hardest part of using the slow cooker for me is planning ahead; so if I fail to do so I have an easy delicious pasta dish I use as a standby or find some frozen leftovers in the freezer. Thank you for sharing!

In our house it's typically a jar of spaghetti sauce and pasts for a REALLY quick and easy meal. Or something on the grill (which I like more!)

Taco's with the hard shell that comes in the box. I sometimes use the box as a salad mix instead of just tacos by crushing the taco's after they have been heated. Mix it with the hamburger, cheese, lettuce sliced fine, tomatoes, grated cheese, bell peppers and onions. I then mix the taco salsa pack with a bit of sour cream and pour it over the mixture for a salad dressing then its good to go!

I did try the pulled pork. Was a little too late to do it in the slow cooker, so cooked it in the oven. It was excellent, and such an easy meal. Not sure why I never cooked it before. In our buns we put coleslaw too - not too much, just a little . Was yummy.

@beindustrial: I've found the name brand makes a huge difference. The ones I have included on here have always worked great, but as far as frozen meals go the only boxed ones we usually get the bagged ones.

My favorite easy meal is pork carnitas tacos. It's basically a slow-cooker meal and uses cheap ingredients (pork shoulder). In addition, it feeds a whole family and when served with cilantro, onions, brown rice, and black beans, it is also a high-nutrient meal!

Shepard's Pie - Brown hamburger and layer on bottom of 9x11 pan, add a layer of your favorite vegetable (it can be right from a can), cover the top with a layer of instant mashed potatoes (seasoned to you liking), and bake in the oven at 350 degrees for about 25 minutes. Total prep and baking time is about 40 minutes tops.

I'm happy with a bowl of Cheerios with banana slices anytime. I like your idea of a day of rest not being about cooking and simple meals also mean a quick clean up and day of the week. I've not tried any of your boxed dinners, they sure do sound like that market has improved over the years. I love using a slow cooker and then freezing for later.

@anonymous: My Mom actually had different varieties of cereal we could choose from when we were kids and we'd have that with a tortilla and cheese for lunch sometimes, I have fond memories of that. I actually was not a fan of box dinners growing up - let me tell you the ones we really like that I have above taste really good!
