Mushroom stroganoff is a good vegetarian dish that is still as wholesome as beef stroganoff and even meet lovers will enjoy,

This mushroom recipe can be made using wild mushrooms or shop brought every day type of mushrooms,Also this recipe is very quick and easy to make, I make this to order in the kitchen at work in about 5 minutes, I do have all the ingredients cut and ready the rice that i serve with this takes the longest, So if your rice is ready it's a very quick meal.

I am lucky enough to live in the country and am able to pick my own wild mushrooms, I do know which mushrooms are edible and which wild mushrooms to stay away from, It is very worth while learning which mushrooms are edible,

Ingredients

  • 3 table spns rapeseed oil (veg Oil)
  • 1 large onion, diced/chopped
  • 1 lb mixed wild mushrooms, sliced, Or portobello mushrooms
  • 1/2 table spn paprika
  • 2 cloves garlic crushed
  • 1 table spn brandy (optional)
  • 3/4 pint veg stock
  • 1 large tub creme fresh or double cream

Easy Wild Mushroom Stroganoff

  1. Heat the oil in to a frying / sauté pan and add the onions and cook for 1 min,
  2. Now add your mushrooms and fry for 1 min.
  3. Add your paprika and crushed garlic and stir until all the mushroom and onion mix is coated.
  4. If your adding brandy now is the time to do this, Remove the stroganoff from the heat when pouring brandy in as it might flame up, Once added move back on to the heat,
  5. Now is the time to add the veg stock and stir to mix all together bring to the boil and boil on a high heat for 2 mins.
  6. Add your creme fresh or double cream and continue to boil for about two more minutes, Your mushroom stroganoff should have thickened to a good constancy now if its still a little to thin boil for longer if to thick add a little water to bring back to the right consistency add salt and pepper to taste.
  7. Now you can serve with a timbale of rice (A serving of rice shaped in a cup)
