Eggplant Tomato Stew

This recipe is very easy to make. I used avocado oil to saute the vegetables. Avocado oil is rich in protein. This is very important for a vegan diet. There are many vitamins in avocado oil which make it comparable to olive oil. It is rich in vitamin A, D, and E. It contains both polyunsaturated and monounsaturated fats. These are healthy fats which are essential to a nutritional diet.

Avocado oil helps maintain lower cholesterol. It can also help prevent various forms of heart disease. Vitamin E and omega fatty acid help inhibit fat absorption into the blood stream. This helps maintain a very healthy body. This recipe will give you plenty of nutrients.

Ingredients

  • 1 eggplant
  • 2 tomatoes
  • 1 can of tomato soup
  • 1/4 cup avocado oil
  • 1 tablespoon of cumin
  • 1 tablespoon of plum sauce
  • 1/4 rice vinegar
  • 1/4 soy sauce
  • 1/4 kidney beans

Instructions

  1. Heat avocado oil in skillet.
  2. Dice the eggplant and tomatoes.
  3. Saute the eggplant.
  4. Add can of tomato soup. Don't add too much water. Half a can is sufficient.
  5. Add tomatoes.
  6. Add the rest of the ingredients.
  7. Stir well.
  8. Allow to simmer for 15 mintues.
