I LOVE egg salad when it's made right and I think my recipe is something special. I grew up on egg salad and I am the only one in my family that enjoys an egg salad sandwich. So when I make this, I want it to be really good and i consider it a super treat..
99% of the time I cook what the family will enjoy together, but when it's just for me, I want something delicious, tasty and comforting. That's my egg salad with just the right seasonings and tidbits on the side.

Ingredients for Egg Salad - Keep these ingredients on hand for egg salad anytime!
- 7-8 raw eggs
- 3/4 cup regular or light mayonnaise
- 1/2 cup celery
- 1 tbls prepared mustard
- 1/2 tsp celery seed
- 1 tsp salt
- 1/2 tsp pepper
Start with Fresh Eggs
Place eggs in a medium saucepan. Cover with cold water. Bring to a slow boil and continue to boil for 5 minutes. Remove from heat, cover with lid and let sit for about 30 minutes. Drain water and replace with cold water. Let cool about 10 minutes. Peel eggs and set aside.

Chop celery to measure a 1/2 cup.
Prepare eggs according to your taste. Finely diced to coarsely chopped.
It's always nice to have a good cutting board on hand for making egg salad
Combine all ingredients until mixed well, then chill.
Now you are ready to combine in a large bowl, eggs, mayonnaise, celery, mustard, celery seed, salt and pepper. Cover and refrigerate until chilled.
Time to enjoy your egg salad sandwich!
Layer a generous helping of egg salad onto your favorite bread or rolls. Add lettuce and tomato, if desired. Serve with french fries, onion rings or potato chips. And my favorite accompaniment is a dill pickle spear!
