I keep frozen creamed spinach in my freezer, and artichokes and parmesan cheese in the cupboard at all time just in case I need some quick recipes for an entertainment emergency. This way I am never without an idea for an appetizer that tastes and looks like I've spent hours preparing. I suggest you start doing the same, you will be happy when those unexpected guests arrive and you have ingredients for quick recipes. Other frozen creamed vegetables also make excellent dips.
Quick recipes are my specialty, I like to cook but I also like to get out of the kitchen fast. I have come up with a number of foods you can make easily. Some people like dips made with sour cream, but I find that this dip is lower in calories than the one you purchase at the market. It's delicious as well as healthy.

Spinach Artichoke Dip
This is one of my quick recipes that I make and generally use Green Giant frozen spinach, since it is low in calories and can be microwaved easily for the dip.
1 package of frozen creamed spinach
1 small can of unseasoned artichokes
grated parmesan cheese
Heat frozen creamed spinach in microwave. Follow package directions.
Open and drain unseasoned artichokes, chop into bite-sized pieces, place in serving dish.
Pour heated spinach mixture over chopped artichokes and mix until blended
Top with parmesan cheese
Served with nacho chips or crackers.
Some alternate I have used are mushrooms, canned onions, and melted cheese.

Artichokes come in a variety of choices. There are seasoned, hearts, bottoms and young artichokes. Decide which type you prefer and keep them stocked in your cupboard. The example in the photo is for artichoke bottoms which tend to be more tender than other parts of the artichoke.
I would suggest trying several different brands and cuts if you are unsure of which type you prefer. I like the tender ones for the dip and like them packed in water rather than oil.
Many quick recipes can be made for artichokes simply by mixing canned ones with cheeses and dressings. I love to get inventive for my appetizers. I like to imagine the flavors together and then experiment with my ideas.

When I think of artichokes it always reminds me of the old Three Stooges episode where they try eating a raw one. I have never actually cooked one myself but imagine it isn't very difficult. When choosing canned artichokes they come in several different sized cans and glass jars. The come plain and seasoned, I prefer the plain when I make my dip.
Another favorite dip that uses artichoke, mayo and parmesan cheese
Bake Artichoke Dip
This is fun to prepare and most of us have the ingredients in our pantries already. One word of warning, it does not work well with low calorie mayonnaise or low fat cheese. Cooked together the smell is horrible.
1 cup regular mayonnaise
1 cup regular parmesan cheese
1 can of drained and chopped artichokes
Mix all 3 ingredients and pour into a baking pan or casserole dish that you want to use to serve you dip. Bake in a preheated oven at 350 degrees for 1 hour until the top has formed a golden crust.
Serve with crackers, nacho chips, veggie, or other dipping foods.
