Cooking with Vanilla extract

Vanilla extract is a solution containing the flavor compound vanillin, pure vanilla extract is made with an extraction from vanilla beans in an alcoholic solution, in order to meet the USDA requirements the solution must contain a minimum of 35 % alcohol and 13.35 % vanilla bean per gallon. Don't let this scare you if it didn't meet those standards it wouldn't be on the grocery store shelves.

If you would like here is a simple recipe to make your own Home Brewed Vanilla Extract

2 c. vodka
5 vanilla beans, cut into 1" pieces

Combine vodka and vanilla beans in a jar with a tight fitting lid. The vodka mixture will turn amber color after a day or two. Let stand 6 to 8 weeks. Yield: 2 cups.

After half the extract is used, add more vodka to cover the beans. The flavor of the beans is gone when the vodka no longer turns to a dark color. (This extract has been used with the same beans for a period of three years, or longer.)

Ok now that you got the vanilla extract let make a southern favorite ;0)

Banana Pudding Pie

7 ripe bananas, sliced
2 cups whole milk
1 5 oz. pkg. French vanilla pudding mix (instant)
1 8 oz. pkg. Philadelphia cream cheese, softened
1 tablespoon banana flavored liquor or extract1 teaspoon of vanilla extract
1 14 oz. can condensed milk (sweetened)
1 12 oz. tub Cool Whip, thawed
1 graham cracker crust

Mix the pudding mix with the milk in a blender or with an electric mixer. Use the type of instant pudding mix which doesn't require cooking.

In a separate bowl, blend condensed milk with the cream cheese until smooth, then fold in the Cool Whip.

Combine cream cheese mixture and pudding mixture, and stir in the liquor or banana extract, combining well.

Slice the bananas and layer over the bottom of the pie crust. Spread mixture over bananas.

Refrigerate until serving time. Garnish with chocolate curls or additional Cool Whip and banana slices.

    Great recipes! I like your vanilla extract recipe! I bet it makes the food taste even better! Although, I never use artificial - only the real thing. It has to be better when you make it yourself!
