Yummy, Fast, & Easy Delicious Dinner

Fast and Easy Angel Hair. Everyone has had times when they dread cooking dinner but mine are quick and easy. This is one of my fast and easy for those time when you are just too tired to spend extra time cooking but still want a gourmet meal. You will find that this recipe can be made in a hurry and is heart healthy as well. It's made with an olive oil and garlic sauce served over angel hair. You can add anything from shrimp, chunks of salmon, or left over meat, vegetable and have a dinner that you will love. If you are like me I add lots of veggies to mine.

This is one of my favorite dishes. I vary the ingredients depending upon what I have available and what the family feels like eating. If you don't need to worry about time for your dinner, than you can use other types that take a bit longer to cook. To keep meals easy and quick most can be adapted to make them fast to prepare. I always try to use the things I keep in the pantry and the cupboard.

When you shop you should consider the things which will cook up easily. Microwave items such as frozen vegetables, meats and prepared meals are always an option. If you don't mind stopping to pick something up from the grocery store the day you need it most stores not have prepared salads, fruits, pre-cut and cleaned vegetables. Some even have prepared hot meals ready to take home. Many store also offer a call ahead menu so you can get freshly prepared custom orders as well. Hospitals in some areas provide prepared meal for special diets, such as cholesterol, diabetic, soft diets and many others. Check with your local hospital to see what they have to offer.

If you are one of those people who shops once a month. Stock-up on pasta, especially angel hair pasta. Angle hair cooks up in just a few minutes, there is no waiting for it. You can make your sauce or toppings while it boils.

Basic Angel Hair

Fast & Healthy Dinner

PASTA: Fill a large pot with water and place on the stove to boil. Add angel hair boil 3-5 minutes or until done drain. Pour cooked pasta into a large serving bowl.

SAUCE: Pour approximately 1/4 cup of olive oil in a frying pan to heat.

When the oil has been heated remove from the heat and add garlic (fresh, minced, or powder) to taste.

If you desire shrimp, mushrooms, or fish place back on heat and sauté quickly, Do not over.

VEGETABLE: To add vegetable-use frozen broccoli, green bean, spinach (creamed or plain) or a vegetable of your choice, heat in the microwave. If the vegetables are frozen it usually need about 5 minutes.

Top with parmesan cheese.

TIME: Less than 10 minutes

Yum. This is one of my favorite. I use Green Giant 10 oz. frozen broccoli or creamed spinach heated in the microwave for 5 minutes and mix into the pasta after I mix the olive oil sauce. Place individual serving in a large bowl for and authentic meal. I like to use pasta bowls for easier eating, they help keep the noodles from sliding off.

Some other dishes that I find interesting have cheese or cheese substitutes in the sauce. Tomato based sauces can be made easily by using fresh vegetable such as zucchini and other types of squash. Sometimes I replace the pasta with eggplant for my daughter who is on a gluten-free diet.

Canned sauces and are an option for people who don't like to cook their own sauces. Another option I try is to make double batches when I cook to save them for later in the freezer. Sautéed precooked onions, peppers and celery are also good frozen, since many times if you don't use them quickly they spoil. Another trick I used is to bake as much as I can on the weekends and freeze it for later. That way I only have to clean up and heat up the kitchen once.
