I always try to use the things I keep in the pantry and the cupboard.
When you shop you should consider the things which will cook up easily. Microwave items such as frozen vegetables, meats and prepared meals are always an option. If you don't mind stopping to pick something up from the grocery store the day you need it most stores not have prepared salads, fruits, pre-cut and cleaned vegetables. Yum. This is one of my favorite. I use Green Giant 10 oz. frozen broccoli or creamed spinach heated in the microwave for 5 minutes and mix into the pasta after I mix the olive oil sauce. Place individual serving in a large bowl for and authentic meal. I like to use pasta bowls for easier eating, they help keep the noodles from sliding off.
Some other dishes that I find interesting have cheese or cheese substitutes in the sauce. Tomato based sauces can be made easily by using fresh vegetable such as zucchini and other types of squash. Sometimes I replace the pasta with eggplant for my daughter who is on a gluten-free diet.
Canned sauces and are an option for people who don't like to cook their own sauces. Another option I try is to make double batches when I cook to save them for later in the freezer. Sautéed precooked onions, peppers and celery are also good frozen, since many times if you don't use them quickly they spoil. Another trick I used is to bake as much as I can on the weekends and freeze it for later. That way I only have to clean up and heat up the kitchen once.
