The recipe for my Fiesta Black Bean and Corn Dip recipe was born after I attended an event many years ago where something similar was served. As you know, most wedding and baby showers you go to have the same boring food over and over. I thought this dip was so different, light, and tasted so good I decided I would try to recreate it at home. I have amped up the flavors a good bit from the dish I originally tasted back then by adding more cayenne pepper and garlic powder. I also use fat free Italian dressing instead of the traditional Italian dressing variety, which often has vegetable oil, making the dip much healthier than the first version I tried. I usually serve the dip with tortilla chips, and if you want to bump the flavors up another notch, try serving this dip with lime tortilla chips!


Quick and Easy to Make

My Fiesta Black Bean and Corn Dip is super easy to make, and often, you will already have most of the ingredients in your pantry. You will notice I do not put measurements by all of the ingredients in this dip. This is because you really must taste this dish as you prepare it, then decide which flavors need to be increased. I start out by adding a small amounts of spices and dressing, then taste the dip, and continue to add more of the ingredients as needed until I get the taste I want. If you like your food less spicy, then use only a very small amount of cayenne pepper. If you are not sure about the taste, get a member of the family involved! My husband is the "official taster" in our house. This is my "go to" recipe when someone asks me to bring a dish to an event at the last minute. I hope you enjoy this dip as much as I do.   • Yields: 4-6

Ingredients

  • 1 can Black beans (rinsed)
  • 1 can Mexicorn
  • 3 green onions
  • Garlic powder
  • Cayenne (red) pepper
  • Fat free Italian dressing

Instructions

  1. Rinse the black beans in cold water using a strainer.
  2. Allow the black beans to drain thoroughly.
  3. Drain the Mexicorn completely.
  4. Rinse the green onions in cold water. Pat dry.
  5. Chop green onions and place in large mixing bowl.
  6. Add Mexicorn to the green onions.
  7. Add black beans to Mexicorn and green onions.
  8. Add small amount of fat free Italian dressing.
  9. Add small amount of garlic powder and cayenne pepper.
  10. Taste.
  11. Continue to add more of the ingredients you prefer to be the dominant flavor.
  12. Serve with tortilla chips.
