Original Recipe for Your Cinco de Mayo Party

Delicious Food for Your Cinco de Mayo Party - Soy Chorizo, Sweet Potatoes and more...

This is a delicious recipe that would make a wonderful addition to any Cinco de Mayo party, it is easy to prepare, it serves at least 6-8 people, it uses Soy Chorizo (less fat), and it is so delicious!

Ingredients

10-12 oz Soy Chorizo (your favorite brand)

2-3 Sweet Potatoes

1-can White corn or 2-Fresh Ears

1 Large Carrot or 6-8 Baby Carrots

1-Medium Onion

1-Can Red Kidney Beans

1-Can Stewed tomatoes

1-Can Diced Tomatoes

Garlic Salt & Cayenne Pepper ( Season to Personal Taste)

Salt & Black Pepper (Season to Taste)

Instructions

First you want to peel your sweet potatoes, I usually leave a little skin but again that is personal preference. Next the Chorizo is already fully cooked but I like to brown it in a large skillet and add the sweet potatoes as well to soften them up a bit.

While that is browning you can add your remaining ingredients to a medium to large stock pot and mix together well. Then add your Chorizo and sweet potatoes, bring to a good boil on medium heat, for approximately 1-hour. Stir occasionally and make sure it is not sticking, then turn to low and let simmer for about 30 minutes.

While it is cooking, you can prepare the Guacamole so it will be fresh and ready to go on top! You can use your own recipe or follow the one below that is fresh and full of flavor. Keep reading to find out how to pull all of this together with some fresh guacamole and garnishments!

The first time we had Chorizo I knew it had to be full of calories and fat, (it had too much flavor not to) so we decided to try Soy Chorizo just to see the difference. I am sure that if Chorizo has been part of someone's regular diet for a long time, they can tell the difference but for me there was no difference except the calorie and fat content.

Find a Good Stock Pot

You can always use more than one...

I love some of the new designs and colors of some of the latest cookware. My stock pot (which is 8 qts) is a few years old and I really think it is time for a new one, just to spice things up. I love the bright colors of the enamel Le Creuset stock pots and Rachel Ray has them in the non-stick in either a solid bright color or just with the trim on the handles.

The bright colors would have been great to have for my Cinco de Mayo party this year! So, I have a plan for next year! Hope you find one you like as well. The stock pot I used is 8 Quarts but you could use a smaller one for this recipe or if you decide to make a larger amount you may want to use a larger stock pot.

Mixing Bowls are Always a Necessity - A color and finish for every taste...

I already don't have enough cabinet space but... I love kitchen STUFF! I like to freshen up my styles and colors sometimes by adding color with my mixing bowls. There are some really beautiful and quality mixing bowl sets that can fit just about any budget.

If you think you have too many... wait until you prepare for that party or holiday dinner, then you realize you can never have enough!

You just can't go wrong with OXO , I have several of their products including this very set and I love them.

 

This recipe can be used for Guacamole dip but for this particular recipe we will use it to go on top of the soup. It is not only delicious but simple and easy to make. You could always make more if you wanted to have enough for a dip as well. If you have a favorite recipe already you can use that or try something new!

  • Prep time: 20 min
  • Cook time: 10 min
  • Ready in: 30 min
  • Yields: 6-8 Servings

Ingredients

  • 2 - Large Avocados
  • 1 -Lime
  • Small Bunch of Cilantro
  • 1 Jalapeno
  • 1 - Small Purple/Red Onion
  • 1 -Can Red Kidney Beans
  • Salt & Black Pepper (Season to Taste)

Instructions

  1. Chop up your onion, jalapeno, and cilantro and put in a medium size mixing bowl along with the salt and pepper, set aside. Peel your avocados and chop then add them to the rest of your mixture, also cutting and squeezing in your lime. Mix all of your ingredients thoroughly until it is mostly paste but with a few small chunks of avocado. You can do all of this while your soup is simmering, cover it and keep in the fridge if necessary.
  2. GARNISHMENTS:
  3. Tortilla Chips-1-2 Bags depending on if you make some extra Guacamole dip.
  4. Shredded Cheese-8 Oz. (whatever is your favorite)
  5. Sour Cream-8 Oz.
  6. Once the soup is done, serve in a bowl with the guacamole on top, shredded cheese mixture (we used a Mexican mix) , a little sour cream and a few broken tortilla chips. We put them in small dishes for everyone to add as they liked but you can also look at the pictures for ideas.
  7. Eat up and enjoy!

These toppings are strictly optional but they do add some more great flavor and add a little crunch. We used a blended mix of Monterey Jack, Mild Cheddar, Queso Quesadilla and Asadero cheeses but you can certainly mix it up and use your favorite! Small prep bowls are a great way to allow guests to choose which garnishment/toppings they may want.
