Delicious Food for Your Cinco de Mayo Party - Soy Chorizo, Sweet Potatoes and more...

Photo © tordon - all rights reserved

This is a delicious recipe that would make a wonderful addition to any Cinco de Mayo party, it is easy to prepare, it serves at least 6-8 people, it uses Soy Chorizo (less fat), and it is so delicious!

Please be sure to add your suggestions for naming this recipe in our comments section! We NEED your help...

10-12 oz Soy Chorizo (your favorite brand)

2-3 Sweet Potatoes

1-can White corn or 2-Fresh Ears

1 Large Carrot or 6-8 Baby Carrots

1-Medium Onion

1-Can Red Kidney Beans

1-Can Stewed tomatoes

1-Can Diced Tomatoes

Garlic Salt & Cayenne Pepper ( Season to Personal Taste)

Salt & Black Pepper (Season to Taste)

First you want to peel your sweet potatoes, I usually leave a little skin but again that is personal preference. Next the Chorizo is already fully cooked but I like to brown it in a large skillet and add the sweet potatoes as well to soften them up a bit.

While that is browning you can add your remaining ingredients to a medium to large stock pot and mix together well. Then add your Chorizo and sweet potatoes, bring to a good boil on medium heat, for approximately 1-hour. Stir occasionally and make sure it is not sticking, then turn to low and let simmer for about 30 minutes.

While it is cooking, you can prepare the Guacamole so it will be fresh and ready to go on top! You can use your own recipe or follow the one below that is fresh and full of flavor. Keep reading to find out how to pull all of this together with some fresh guacamole and garnishments!

Soy Chorizo vs. Chorizo - You might be amazed...

The first time we had Chorizo I knew it had to be full of calories and fat, (it had too much flavor not to) so we decided to try Soy Chorizo just to see the difference. I am sure that if Chorizo has been part of someone's regular diet for a long time, they can tell the difference but for me there was no difference except the calorie and fat content.

Find a Good Stock Pot

You can always use more than one...

I love some of the new designs and colors of some of the latest cookware. My stock pot (which is 8 qts) is a few years old and I really think it is time for a new one, just to spice things up. I love the bright colors of the enamel Le Creuset stock pots and Rachel Ray has them in the non-stick in either a solid bright color or just with the trim on the handles.

The bright colors would have been great to have for my Cinco de Mayo party this year! So, I have a plan for next year! Hope you find one you like as well. The size, quality, finish and price can vary depending on your personal choices. These are some of the top quality brands that all have good reviews and a mid-range price.

Benefits of Using Sweet Potatoes - A great substitute for White Potatoes...

Growing up about the only time we ate sweet potatoes was either baked with butter and brown sugar on top or in a casserole, things sure have changed. I love sweet potatoes and they are so much more versatile than you think.

The first time I saw a recipe using sweet potatoes in something savory, I thought to myself " that just will not taste good." Of course I was terribly wrong and now we incorporate sweet potatoes is so many of our dishes. Here are some of the benefits of Sweet Potatoes:

We would love to have your help in naming this delicious recipe, please leave your suggestions in the comments section below! Thanks for your help!

White Corn Offers Health Benefits - Always a summertime favorite...

Sweet White Corn is a summertime favorite for outdoor BBQ's slow cooked on the grill but it also is another excellent choice for adding nutrition and flavor to your cooking. Here are some of the benefits of White Corn:

Kidney Beans for your Health - Health Benefits abound from this dark red bean...

Kidney beans originate from Peru and have increased in popularity all around the world with their savory flavor and many health benefits. But did you know another reason they are a popular addition to recipes, they absorb other flavors during cooking! A great way to bring food flavors together.

They are best known for providing Healthy Antioxidants and Vitamin K to help preventing cancer and protecting cells from oxidative stress which also greatly reduces the chance of getting cancer.

The Vitamin K is also "BRAIN FOOD", along with a good source of thiamine from the Kidney Bean. They are also high in protein, helps keep blood sugar levels from spiking. They also offer these benefits:

Sulfite Detoxification

Digestive Tract Health

Cardiovascular Benefits

Energy Booster

High in Protein

Bone Strength

Hard to believe that some little red beans good be so good and essential to our health!

When chopping fresh vegetables, you need a good knife or sometimes multiple knives depending on what you are chopping and you also need a good cutting board or two. I have several different sizes and colors so I am never without one when I need it!

Adding Avocado - Hass Avocados are always delicious!

Garnishments - Cheese, Sour Cream, Tortillas for everyone...

These toppings are strictly optional but they do add some more great flavor and add a little crunch. We used a blended mix of Monterey Jack, Mild Cheddar, Queso Quesadilla and Asadero cheeses but you can certainly mix it up and use your favorite! Small prep bowls are a great way to allow guests to choose which garnishment/toppings they may want.

Mmm.. Mmm... Good!!!
