More people than ever are cutting gluten out of their diets, which makes wheat-free food a hot topic in food, health and recipe domains.

I have always been interested in gluten free foods and why people are less tolerant of gluten as well as wheat and lactose. It would be a great topic for me to research, as I am interested in health and diet.
Earlier this year my younge sister; by six years found out that she had Celiac Disease. My daughter, who is eighteen years old, had been out of high school all the second semester of her junior year. They were testing both of us for we were having severe stomach pain, bowel problems, and cramps just to name a few. I had done several articles on stomach problems in young adults. The diagnosis was IBD Irritable Bowel Disease in both of us and that it was hereditary. Yet even with some low dose of medicine we were still expericing discomfort. I explained to our physicians about my sister and they tested us for Celiac but the test results came back negative.
Living gluten free can be a challenge as wheat gluten can be hidden in many ingredients that are used to cook and to bake foods and, especially, in prepackaged foods. I find that the best way around this is to bake and make my own gluten free foods.

I'm living proof that "living gluten-free" is not impossible. I spent a year listening to my doctor push the gluten intolerance issue, thinking there's no way I have gluten problems, doc! I even attended a class on living without gluten - which scared the heck out of me! Who could live this way???
Fast forward to the new doc, the one I thought would be "realistic" about gluten. One small test confirmed that I am, indeed, gluten intolerant. But this time, a visit with a nutritionist helped me realize that it's not as impossible of a lifetyle as someone might imagine.
I'm looking forward to this topic, as I have a lot to share - and a lot to learn!

We are going to continue our shopping to stock our pantry and refrigerators with the basics that we require for cooking and baking.
