Barbecued. The hot-smoke type of barbecue pit is best. The type where the fire is in a separate chamber from the meat. 4-5 hours at 275-350 degrees. You can grill them on charcoal, then finish in a 350 degree oven, if you dont have a BBQ pit.
BBQ seems to be too simple of a answer. Although it is probablly the best answer.
Before you can BBQ them, you must first slow cook them. If you are cooking just a slab or two, I would cook them in a roasting pan or dutch oven with 1/2 cup of beer and 1/2 cup of water and a couple of dashes of Mesquite or Hickory liquid smoke. Cook at 275 degrees for about 2 hours. Let cool for about 3 hours in the refrigerator. Then cook on a grill and baste with BBQ sauce on each side at least 4 times.
