What to do with Red Potatoes?

Aside from potato salad, because the kids just aren't into that ~ what are some recipe ideas or dishes you enjoy that use red potatoes.  I was raised on russets (brown potatoes) ~ they have a different flavor, so the kids notice & don't like them mashed or baked like how I prepare the russets.  We ended up with A LOT of potatoes this weekend & I would like to use them rather than waste.   Thanks!

Wash them and boil with the skins on. Then melt a 1/2 stick of butter in a pot and stir in 4 tablespoons pf flour. Cook flour while stirring until mixed well. Pour in about 3 to 4 cups whole milk. Cook and stir until thickened a little. Add drained potatoes and add salt and pepper to taste. Heat whole potatoes in the white cream sauce and serve. Delicious.

This sounds really good for little/baby red potatoes.  I'm not sure it would work with big ones.  Thank you, sounds very tasty

You can of course cut them up before boiling and adding to the white sauce. They are still red potatoes.

I LOVE the flavor of red potatoes--they are my favorite! I also have a hub on "Recipe for Dad's Slungola" that is great for using red potatoes.

I probably can't include the link, but if you check my profile page, or do a search for that title, you'll find it. smile

It's a great combo of potatoes, brats, onions, and green beans...a favorite in my family!

I just love red potatoes try this .....these are like dinner fries but without all the fat. Everyone I've ever served them to just loves them! You can adjust the seasonings to suit your own individual taste.

    CRISPY OVEN POTATOES

    Ingredients:

1 1/2 lbs. red boiling potatoes
    3 Tablespoons olive oil
1 teaspoon paprika [you can omit this if you like]
    1/2 teaspoon onion powder
    1/2 teaspoon garlic powder
    1/2 teaspoon salt
1/2 teaspoon black pepper [omit if you don't like spicy]
Dash of cayenne [omit if you don't like spicy]
    Nonstick vegetable spray

    Preparation:

    1. Scrub potatoes but do not peel. Cut each potato in half and then cut each half into 4 wedges (2 wedges for small potatoes).

    2. Place potato wedges into a pot and cover with water. Cover pot, bring to a boil, and cook potatoes for 8-10 minutes until they are crisp-tender but not yet soft (test with fork).

    3. While potatoes are cooking, combine olive oil and seasonings in a medium bowl. Toss the potato wedges while still warm in the olive oil and seasonings. [It's not in the original recipe, but I like to add 1 Tbs. dried rosemary to the oil mixture.] Potatoes can be prepared to this point several hours in advance and left at room temperature.

    4. Prepare a baking pan with nonstick vegetable oil spray. Arrange potatoes in a single layer and bake for 25 minutes or until golden brown. Serve immediately
    ------------------------------------------------------------------------------------------------------------
Or you can go simple with this quick recipe..
Roast them or boil them. Red potatoes don't have as much starch so they can be boiled without falling apart. Put a little butter on them (or olive oil), a sprinkling of salt, maybe some chopped parsley. When it comes to potatoes, simpler is better, and especially red potatoes! I hope you enjoy one of those ....Happy Eating.

Try to teach them the benefits of a Constitutional government with a free-market friendly economy. Educated them on the beauty of free speech, freedom of religion...oh...wait...when you said Red you meant color...nevermind.

If you like onions here is a recipe I found on allrecipes.com

    Ingredients
1 (1 ounce) envelope dry onion soup mix
    2 pounds red potatoes, halved
    1/3 cup olive oil

    Directions
    Preheat oven to 450 degrees F (230 degrees C).
In a large plastic bag, combine the soup mix, red potatoes and olive oil. Close bag, and shake until potatoes are fully covered.
Pour potatoes into a medium baking dish; bake 40 minutes in the preheated oven, stirring occasionally.

Put them in a potato gun and shoot them over a row of houses onto neighboring streets lol.  Just kidding ;-)

I did this as a kid and definitely do not recommend.  It was hella fun at the time but I paid dearly for it.

Sorry, couldn't resist.  Wish you all the best of luck with finding a good recipe to put these potatoes to use in.

They are delicious boiled and used in potato salads. I don't cook much but boiled and red potato salads are better than the brown potato salad.
