Enjoy Delicious Fruit Salad In The Summertime

I enjoyed this Fruit Salad Recipe back in the 1970s when I was teaching at Pendleton Elementary School. I found out that it was the standard favorite dish for the teachers during the Teacher Appreciation Celebration. Since that time I have made this wonderful Fruit Salad every summer and shared it with many friends. I recently made this when my cousin came for a visit and my 9 year old grandson helped me prepare it. He had his own ideas of how it should be layered and how the topping was to be applied. Actually, his method was probably better and it sure did taste great!

This is a simple recipe that my whole family enjoys. I hope you will like it, too!

My Grandson's Fruit Salad

Serve Fruit Salad Anytime of the Day

This fruit salad can be served anytime as an afternoon treat, dessert, or nighttime snack. It is also great to take to a covered dish event and is always a big hit.

Of course, the summer is the ideal time for this salad so that your fruit is fresh. I have used frozen peaches and frozen blueberries when I could not find the fresh ones.

No matter when I eat it, I always enjoy it. Yummy! It makes my mouth water to even think about it.

Fruit Salad Recipe

Prep time: 1 hour
Ready in: 1 hour
Yields: 6

Ingredients

  • 2 Cups Sliced Peaches
  • 2 Cups Sliced Strawberries
  • 2 Cups Blueberries
  • 2 Cups Sliced White Seedless Grapes
  • Topping: 8 oz soft Cream Cheese
  • Topping: 8 oz Sour Cream
  • Topping: 1/2 cup Sugar
  • Topping: 1/2 tsp. vanilla

Instructions

  1. Wash fruit, drain and slice fruit. Layer in compote.Mix all the Topping Ingredients using a mixer and spread over the top of your layered fruit.Add crushed pecans if desired or you can garnish the top with a strawberry.

This Fruit Salad is delicious

You can layer the fruit or mix it. Either way is fine. It is pretty to layer and to make sure they are along the sides of the bowl or glass. I usually try to layer starting with the sliced peaches, then strawberries, blueberries and save the white grapes for last. I slice the grapes down the middle long ways.The topping will need to be mixed with a mixer until smooth. My grandson put this topping on. We topped with chopped pecans and a few blueberries.It is best to make the Fruit Salad ahead of time, cover and place in the refrigerator. The topping will gradually seep into all the fruit which not only looks pretty but distributes the taste.

One year I purchased several plastic fun looking parfait glasses and filled them with this Fruit Salad. I then took them around to friends as a surprise. It was fun. I have also given the individual Fruit Salads to friends who were in the hospital or recuperating from surgery. Now, that was a big hit.

So, this is a fun one for your family or to share with friends! Enjoy!

You can put the Fruit Salad in a Trifle Bowl or a Parfait Glass - Make your presentation of this Fruit Salad special

Fruit Salad is delicious and also good for you. You can reduce the calories in this recipe but easily substituting low fat products in the topping. They are readily available.

I have often heard that "it is all in the presentation" - well, that may be true with Fruit Salad. Make it fun!

How To Make Spaghetti Salad

Spaghetti Salad Recipe

Cook Spaghetti noodles and drain.

Add diced tomatoes, diced cheese, diced bell pepper and onion

After that you can add whatever else you want such asCucumbers, olives, squash, cauliflower, etc.Toasted Pecans or Almonds would be a great addition, also.

Mix with mayonnaise. You add as much as you like. I never have measured the mayonnaise but just mix in like you would any pasta salad.

A wonderful Summertime Treat! We enjoy it at lunchtime. It is always so good!

      ibidii, thank you for sharing your mom's recipe for Ambrosia. I will have to try it. We make ambrosia but we usually use fresh oranges and apples.

      There is a recipe that my Mom's family made. The basic formula is whipped cream, coconut, chopped nuts, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries, nutmeg and cinnamon. You can add any kind of fruit. We even started to use kiwi which is very nice. You can add mango and star fruit. Any kind of fruit. The difference is that you use the coconut and of course the marshmallows. You can leave out the marshmallows for a lower sugar version. I like real whipped cream, some use cool whip or the non dairy kind. In my grandmother's cookbook she had a clipped news article that this salad called Ambrosia was suggested by Helen Keller who visited San Francisco at the time the new paper article. Any way you call it or serve it, always is a wonderful delicious recipe. Wonderful lens OhMe!

      This is such a simple recipe but so good. I've had it before, except with apples instead of peaches. Pears would be lovely in it, too, or raspberries. I think I'll try it with several different combinations. I love fruit and I love sweet creamy things, so this is perfect for me!

      Fruit salad is very easy to make, a lens about it could be expected to be fairly ordinary. But add some fun photographs, fancy text, a few videos (love The Wiggles by the way), and you have an extraordinary lens. I really enjoyed this, nicely done. I love fruit salad too, and I enjoyed leaving a blessing behind.

      A close friend from Pakistan, came to our home and made fruit salad for us.He cut all kinds of fruit. Oranges, Bananas, Melon, Apples, Pears, Qumrai and Strawberries.Then over the bowl he squished the juice from two limes. The spices he adds were pepper and salt!!! I cannot tell you how good this was. The lime made the sauce thick and the spices made it taste like we had ordinary food. We and he ate this for days!

      I've always been naughty when it comes to fruit - I simply don't eat enough. I've seen other recipes for fruit salad, but this seems to be far more interesting and has a combination of all the fruits that I actually do enjoy to eat. I can't wait to give the recipe a go!

      Your spaghetti salad reminds me so much of that one time I ran out of salad ideas and came up with such an odd mix of spaghetti, raisins, peaches, apples and oranges, condensed milk and cream. Only your version are made of veggies.
