Homemade Gingerbread Cake ... A Holiday Favorite ... A Year-Round Treat!

Ahhhh, moist, spicy-sweet gingerbread cake . . .

Whether it's a bundt cake, layered or loaf . . . there's nothing quite like the scent of fresh-baked gingerbread wafting through the house during the holidays. (And for die-heart ginger aficionados, it's a welcomed aroma any time of year).

If you love gingerbread and want to throw your taste buds into a spin, here are seven fabulous recipes for gingerbread cake . . . all moist, all ginger-y and all scrumptiously delicious!

I adore ginger so the gingier, the better.

This moist, zesty gingerbread rendition is oh so delicious, especially served warm. For the fall/winter holidays, I suggest serving with a scoop of pumpkin or eggnog ice cream. But for spring (around Easter), I choose to top a slice with a dollop of vanilla whipped cream.

  • Prep time: 20 min
  • Cook time: 40 min
  • Ready in: 1 hour
  • Yields: 16


  • 2 1/4 cups white whole wheat flour
  • 1/4 cup raw sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/2 cup melted unsalted butter
  • 3/4 cup molasses
  • 3 tablespoons grated fresh ginger
  • 1/4 cup water
  • 1 large egg
  • 1 cup buttermilk


  1. Preheat the oven to 350°F.
  2. Grease and flour a 9" square pan.
  3. In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, pepper, cinnamon, cloves, and nutmeg. Set aside.
  4. Melt the butter in a heatproof measuring cup. Add the molasses and the freshly grated ginger to the cup. Stir until just blended.
  5. Add the molasses/ginger mixture to the flour mixture and stir to moisten.
  6. Add the water, stirring until everything is moistened.
  7. Whisk together the egg and buttermilk. Then add to the batter, stirring until evenly combined.
  8. Pour the batter into the prepared pan, and bake for 30 to 35 minutes, or until toothpick inserted in the middle of cake comes out without batter (or, until the cake just begins to pull away from the edge of the pan).
  9. 6) Remove from the oven and cool on a rack for 15 to 20 minutes before slicing.

Applesauce Gingerbread Cakes with Orange Glaze

With the addition of applesauce and baked in mini bundt pans, these orange glazed mini gingerbread cakes are true winners!

  • Prep time: 20 min
  • Cook time: 40 min
  • Ready in: 1 hour
  • Yields: 6


  • 1 1/2 cup all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon ground ginger powder
  • 1 " piece of grated fresh ginger
  • 1/8 teaspoon black pepper
  • 1 cup applesauce (unsweetened)
  • 1/2 cup molasses
  • 1/2 cup vegetable shortening
  • 1 beaten egg
  • For Glaze:
  • Zest and juice of medium orange
  • Confectioners sugar


  1. Preheat your oven to 350°F. Grease a 9" cake pan or 6 mini bundt pans.
  2. Combine the flour, brown sugar, spices, salt, baking powder, baking soda, and fresh ginger in a mixing bowl and whisk to combine.
  3. In a medium saucepan, combine the applesauce, molasses, and shortening, and heat over low-medium heat just until the shortening has melted.
  4. Pour the wet ingredients over the dry, add the egg, and mix well.
  5. Pour batter into your cake pan or bundt pans, and bake 25-30 minutes (for the cake pan) or 20-25 minutes (bundt pans) until a toothpick inserted near the thickest part of the cake comes out clean.
  6. Cool in the pans briefly, then remove from the pans and cool on a rack.
  7. Make the glaze by combining the orange zest, juice, and enough confectioners sugar to make a thick-but-still-flowing glaze. (Sorry, no measurements. I always do this by eye.) Drizzle over the cakes when they're just slightly warmer than room temperature. The glaze will set up fairly quickly.
  8. Alternately, skip the glaze, and serve still warm with a little ice cream or whipped cream.
