Gluten-Free Peanut Butter Cookies - Ingredients (for about 16 - 20 cookies)
- 1 egg
- 1 cup peanut butter (I use creamy peanut butter, but feel free to experiment with the chunky version if you like.)
- 1/2 cup brown sugar (Brown sugar is my personal preference. White sugar will probably work just as nicely in this recipe, though.)
- 2 tbsps rice flour

Gluten Free Peanut Butter Cookies - Super Easy Preparation
- Preheat an oven to 350° F.
- Put egg, sugar and peanut butter into a large bowl.
- Mix together with a fork.
- Add rice flour and continue to mix until well-blended.
- Drop tablespoons of batter onto a baking sheet, lined with parchment paper or aluminum foil.
- Bake for about 10 - 15 minutes or until the edges turn brown
- Remove from the oven and allow your peanut butter cookies to cool on a wire rack.
