Greek Grilled Cheese Healthy Style
I found this wonderful Greek Grilled Cheesed Sanwich courtesy of Hungry Girl. The photo links to their website for great recipes and food info.
Entire recipe: 202 calories, 8.5g fat, 640mg sodium, 21g carbs, 5g fiber, 4g sugars, 11g protein -- PointsPlusÂ® value 5*
2 slices light bread
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tbsp. crumbled reduced-fat feta cheese
1 tbsp. diced and seeded tomato
1 tbsp. diced red onion
1 tbsp. chopped basil
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
Lay bread slices flat and spread both with the cheese wedge. Top one slice with feta cheese, tomato, onion, and basil. Top with the other bread slice, cheesy side down. Spread the top of the sandwich with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.
Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Eat up!
What A Grilled Cheese Kind Of Week......
The last couple of weeks as a firefighter have been busy, crazy, physically and emotionally demanding. One after the other we were called to mutiple structure fires, serious MVA's (motor vehicle accidents) that required heavy rescue to remove trapped victims and fire supression support. There were more mulch fires that burned up into homes and businesses than I can remember happening all at once in ages. Warm weather with no rain made conditions ripe for fire to succeed. We had some huge brush fires in the woods, all located too close to people's homes and they had to be stopped, quickly.
The emergencies had no limits on time. Middle of the night, early morning, afternoons, evening meal time.....
What does all this have to do with a grilled cheese sandwich? One night in between fires and emergencies, after putting the fire trucks back in service, after having missed way too many meals we finally got a chance to hit our local diner. I couldn't wait to eat. When the waitress got to me all I could say was I'll have a Grilled Cheese, with mozzarella cheese and bacon. Oh I have to tell you, that was the best grilled cheese sandwich I've ever eaten. I wish now I had taken a photo of it with my cell phone but there was no time for that. As soon as it arrived in front of me accompanied by a stack of french fries, I dug right in. I guess I will just have to go back to the diner soon and order another one, just so I can take a picture of it of course!
So the moral of the story is, when the going gets tough, the tough get......a grilled cheese sandwich. Awesome comfort food, not too heavy but so satisfying.

The Cheese Is The Star
No matter how you slice it, cheese is the star of the grilled cheese sandwich. So many cheeses to choose from. Sometimes you are in the mood for a tangy swiss cheese, classic american cheese or melty gooey mozzerella cheese sandwich.
