Grilled Coconut Is a Wonderful Tropical Treat

Enjoying a tropical sunset with a refreshing drink and a slice of grilled coconut is about as close to paradise as I have been. Just thinking about it now makes my mouth water. We were treated to sweet, succulent grilled coconut while at a resort on one of the outer islands of Fiji.

Every night they grilled it right out on the beach, put it in small bowls and shared it with their visitors. To the staff it was no difference than a bowl of peanuts on a bar. To us it was a treat almost more delicious than mealtime. And it was so quick and simple to make. We were amazed as we watched and learned the process.

If you have the opportunity, take a trip to Fiji and enjoy it for yourself. If not, grab a coconut, cut it open, toss it on the grill and be patient.

How to Grill a Coconut - It is so easy, it's almost embarrassing

  1. Open a fresh coconut and drain out the liquid.
  2. Break the coconut into pieces (we use a hammer).
  3. Place the pieces white-side down directly on the grill / barbeque .
  4. Grill over low flame until white side is a light toasty brown. This can take up to 15 minutes.
  5. Enjoy your treat with a bit of salt.

      We grill fresh pineapple slices a lot here, but haven't yet with the coconut. Will have to remedy that very soon!

      A follow-up to my previous post: some of the fruits that I think would go well grilled coconut in either a fruit salad or as ka-bobs: Mangos, Papaya, Pineapple, thick slices of Oranges or Tangerines etc.

      Our neighbors from across the hall are from Hawaii and tell me that coconut prepared in this manner is a wonderfully delicious Summertime treat, though it can actually be made and enjoyed anytime during the year. I can also see adding some grilled bananas or plantains and other summertime fruits that can be grilled and make either a Summer Grilled Fruit Salad or Grilled fruit sish-ka-bobs .

      Sounds good. I have not had many fresh coconuts in my life, but I love coconut oil, creamed coconut, etc. I think maybe I will get some of the tools you mention above, because generally, coconuts are hard to open!

      I've never tried this delicacy. Coconut is on my list of foods to avoid on my diet, but I'm using the oil. I'm not very good at opening coconuts, so I rarely eat it fresh, even though I like it.
