Grilled Coconut Is a Wonderful Tropical Treat
Enjoying a tropical sunset with a refreshing drink and a slice of grilled coconut is about as close to paradise as I have been. Just thinking about it now makes my mouth water. We were treated to sweet, succulent grilled coconut while at a resort on one of the outer islands of Fiji.
Every night they grilled it right out on the beach, put it in small bowls and shared it with their visitors. To the staff it was no difference than a bowl of peanuts on a bar. To us it was a treat almost more delicious than mealtime. And it was so quick and simple to make. We were amazed as we watched and learned the process.
If you have the opportunity, take a trip to Fiji and enjoy it for yourself. If not, grab a coconut, cut it open, toss it on the grill and be patient.
How to Grill a Coconut - It is so easy, it's almost embarrassing
- Open a fresh coconut and drain out the liquid.
- Break the coconut into pieces (we use a hammer).
- Place the pieces white-side down directly on the grill / barbeque .
- Grill over low flame until white side is a light toasty brown. This can take up to 15 minutes.
- Enjoy your treat with a bit of salt.
