Grilled Eggplant Parmigiana

Grilled Eggplant Parmigiana is a recipe that you can make and have fun with variations. Here are just a few ideas:

1. Add mushrooms, onions or spinach.

2. Add seasoned cooked shrimp.

3. Spice it up, with some red pepper flakes or jalapenos.

4. Experiment with different cheese blends and sauces.

Serving Size

Serves: 6

Ingredients

  • 2 medium eggplant, ends removed.
  • Olive oil
  • Garlic powder
  • Salt and pepper to taste.
  • 1 1/2 cups prepared marinara sauce
  • 2 1/2 cups shredded Italian cheese blend

Instructions

  1. Cut eggplant into 1 inch slices.
  2. Drizzle with olive oil and sprinkle with garlic powder, salt and pepper.
  3. Grill for about 5 minutes on each side.
  4. In a greased 9 X 13 baking dish, layer sauce, eggplant and cheese, repeat.
  5. Bake at 375F. for 30 minutes or until cheese is melted and bubbly.

      Eggplant Parmigiana is one of my favorites, I like all of the variations you have here. I've never thought of grilling the eggplant and will be giving this a try. Thanks for just another great recipe!!

      This looks delicious and I will certainly try it. I was even interested enough to Google "Marinera Sauce", as I've never heard of it and thought it might be seafood sauce. In fact it was a tomato-based sauce, and something I make and use all the time without knowing the name.
