Homemade Pound Cake
Pound Cake. an old fashioned cake with a modern twist
Once you made a Pound Cake with a pound each of four ingredients: flour, butter, eggs, and sugar
We don't have to use a pound anymore, the quantity of the ingredients can change as long as they're all the same weight, the ratio must be the same; 1:1:1:1.
A Pound Cake on its own is tasty enough but over the years, toppings and other additives make this old-fashioned favourite a very versatile cake.

Basic Pound Cake Recipe
This basic recipe will get you started
Ingredients
4 cups flour
6 eggs
6 cups sugar
2 cups butter
2 tsp baking powder
Pinch of salt
Preparation
Cream butter and sugar, mixing well. Add the eggs, one at a time. Add flour, baking powder, salt and extract. Beat well. Pour batter into a large greased bundt cake pan. Place the cake in the oven and then turn on the oven to 325 degrees. Bake for approximately 55 minutes. Let cool.

To make a quick glaze for your pound cake you will need:
1 cup Powdered Sugar
3 tbsp. Milk
3 tbsp. Unsalted Butter
1 tsp. Vanilla Extract
Melt 3 tablespoons unsalted butter in a small saucepan on the stove top. Remove saucepan from stove when butter is completely melted. Add 1 cup powdered sugar, 3 tablespoons milk and 1 teaspoon vanilla to the saucepan containing the melted butter. Stir glaze in saucepan with a spatula until smooth. Pour hot glaze over warm pound cake.
Strawberry Cream Cheese Pound Cake
A fun twist on a classic recipe

Ingredients
3/4 pound butter, softened (1 1/2 cups)
1/2 pound cream cheese, softened
2 cups sugar
1 pinch salt
2 teaspoons butter flavoring
6 eggs, room temperature
3 cups sifted flour
1 pint strawberries, sliced
Directions
Cream the cheese, butter, and sugar together until light and fluffy. Add a pinch of salt and the butter flavoring, and beat the mixture well.
Add the eggs, one at a time, beating thoroughly after each addition. Stir in the flour. Gradually add the sliced strawberries, gently folding them in after each addition.
Spoon the batter into a buttered and floured cake pan. (Use loaf pans or those nice little mini-loaf sizes for gift-giving)
Bake the cake in a preheated 325ºF oven for one-and-a-half hours, until the cake begins to shrink from the sides of the pan. Place the pans on cooling racks until cooled; turn cakes gently onto wire racks. Top with fresh strawberries and whipped cream.
