Making your own stock for soup

Make your soup spectacular by simply making your own homemade stock. It takes some extra time however it makes a world of difference when it comes to creating great soup. This is a recipe for a simple vegetable stock, of course you can make beef, chicken or fish stock as well.

Prep time: 20 min
Cook time: 1 hour 5 min
Ready in: 1 hour 25 min
Yields: 4 - 6

Ingredients for vegetable stock

  • 1 onion, chopped
  • tablespoon oil
  • 2 leeks, chopped
  • 4 carrots, chopped
  • 2 parsnips, chopped
  • 4 celery, chopped
  1. Add ingredients and cook for 5 minutes. Do not brown.
  2. Add 3 1/2 liters of water and bring to a boil, skimming the surface when needed.
  3. Add 2 bay leaves, 4 garlic cloves and a dozen peppercorns. Then reduce heat and simmer for an hour.
  4. Pour your stock into a sieve over a bowl to extract any solids. Press gently to extract all the liquid from the stock.
